These buffalo chicken tacos are one of our favorite healthy meals for dinner! They have the best flavor combination of spicy buffalo sauce and salty, creamy blue cheese. The best part is they’re almost guilt free because I made my own homemade Greek yogurt blue cheese dressing!

Years ago we used to host exchange students. Our most beloved student from Mexico went back home and has been making my buffalo chicken taco recipe for her family since then. So good!

  • Make the blue cheese dressing: In a bowl, mix Greek yogurt, blue cheese, garlic, salt, and pepper using a fork. Set it aside.
  • Cook chicken: Heat a large skillet on medium-high, melt butter and oil, then add chicken and sprinkle with salt and pepper. Cook for 5-6 minutes, stirring occasionally for a golden brown finish.
  • Flavor the chicken: Stir in hot sauce, turn off the heat, and adjust to taste.

Can I make these tacos in Instant Pot?

Absolutely! To the bottom of Instant Pot, add chicken breasts, sprinkle them with salt and pepper, then add butter and hot sauce on top. Close the lid, set pressure vent to Sealing and press Pressure Cook on High or Manual button for 10 minutes. Wait 5 minutes, then release remaining pressure, shred chicken, toss with more sauce if needed, and assemble your tacos.

Ingredients  

For Buffalo Chicken Tacos:

  • 2 pounds boneless skinless chicken breasts cut into 1.5" pieces
  • 1/2 tablespoon oil for frying
  • 1 tablespoon butter
  • 1/4 cup Frank's Red Hot sauce or more to taste
  • 1 head Romaine or iceberg lettuce shredded
  • 3 large carrots shredded
  • 12 flour or corn tortillas 6 inch
  • Salt and pepper to taste

For Blue Cheese Sauce:

Instructions 

  • In a medium bowl, add Greek yogurt, blue cheese crumbles, garlic, salt and pepper. Stir well with a fork and set aside.
  • Preheat large skillet on medium-high heat, add butter and oil and wait until melted. Add chicken and sprinkle with a pinch of salt and pepper. Cook for about 5-6 minutes, stirring occasionally and allowing sides to brown.
  • Add hot sauce, stir to coat and turn off heat. Taste and add more hot sauce, if desired.
  • Place tortillas on a plate, cover with damp paper towel and warm up in a microwave for a few seconds or use your method.
  • To assemble each taco, lay tortilla on a plate and place desired amount of lettuce, carrots and buffalo chicken in the middle. Drizzle with blue cheese sauce and enjoy immediately.

Notes

  • Store: Refrigerate buffalo chicken, sauce and toppings separately in an airtight container for up to 5 days.
  • Freeze: You can also freeze chicken and sauce only, separately in containers, for up to 3 months. Thaw in the fridge overnight.

    These were just lovely! Sliced/shredded several crispy veggies (lettuce, carrots, celery, bok choy, green onions and carrots) and set it up taco bar style. Big hit and so simple.
