Made with Nature’s Path premium organic dark chocolate & peanut butter granola, homemade chocolate and coconut cream. That is only 5 ingredients! And if you use melted store bought organic dark chocolate that would be 3 ingredients! I’m seriously minimalistic these Holidays.

This new Love Crunch granola is so flavourful you don’t need many extra ingredients to turn it into a high-end looking dessert with benefits. Must be all that fair trade dark chocolate chunks and organic roasted peanuts. That is why I love Nature’s Path products so much – I know that I’m feeding my family premium organic ingredients.

I made a chocolate by melting coconut oil on a stovetop, and then whisking with maple syrup and cacao powder. You could also use melted store bought organic fair trade chocolate bars. I think you would need 2 – 3.

Then I mixed it with granola. How pretty does this look?! It is not only a personal pleasure of mine to eat chocolate but photograph it as well.

Then I made a coconut cream by refrigerating a can of full-fat coconut milk, draining the liquid and reserving only cream. You don’t have to whip it or mix with any other ingredients. Just whisk until smooth. Coconut cream balances out the sweetness of chocolate and granola, and adds creaminess to bars. Perfecto.

Because no bake chocolate peanut butter bars are made with granola and for just everyone’s simplicity I placed bars into muffin liners and froze that way in a container. It is just easier to serve this way. And a word on sugar before you run away from a screen to make these beauties. Yes, bars contain sugar but not refined white sugar but rather fair trade organic cane sugar and maple syrup. Plus they are extremely filling because of all healthy fats. Plus live a little, people – these are Holidays and this is a treat. I’m truly in for moderation and know quality vs. quantity. So, yes, I had a few.

Ingredients

Directions

  1. Place can of coconut milk in the fridge overnight.
  2. Line 8" x 8" baking dish with parchment paper leaving overhangs. In a small pot, melt coconut oil on low heat. Add maple syrup and cacao powder; whisk until smooth. Pour a little more than half into a medium bowl, add 1 cup of granola and mix well. Transfer to previously lined baking dish, level with spatula (it is OK if mixture is not touching the edges) and freeze for 30 minutes.
  3. In the meanwhile, open a can of refrigerated coconut milk and scoop out white cream into a medium bowl. Refrigerate clear liquid separately and use in smoothies or curry. Whisk cream until smooth. Spread on top of firmed up crust, sprinkle with remaining 1 cup granola and drizzle remaining chocolate on top. Freeze for at least 2 hours.
  4. Holding onto flaps, remove bars from the baking dish, place on a cutting board and cut into 16 squares using sharp long knife. Serve frozen or a bit thawed, in muffin cups if desired.
  5. Storage Instructions: Keep frozen in a glass airtight container for up to 3 months.

Notes

*I recommend using Thai Kitchen, Trader Joe's Coconut Cream or Compliments canned coconut milk with creamy consistency. I wouldn't use Asian brands, it is grainy and does not mix well.
