I feel like I’ve been cheating…on my wine…with this no bake peanut butter pie. Let me explain. On January 1 I woke up and thought it would be cool to live a year without wine or any spirits. If you just joined, let me put it this way => I’m not an alcoholic, far away from it, but I like a few glasses of vino on weekends. I got 2 kids (3 for now, see previous post) and I do really-really-really need to vent at times. The truth is, we all need…
So, I had to figure out my new “addiction” => my vent. It’s very bad at times. Although I gotta admit, my oldest one => Gold, youngest one => Devil. As usual, one of each. So, the problem isn’t that large then and I’ve seen worse. Any time I see a desperate mother with a few kids having a moment and mine are just looking, I run home and scream to Alex “Honey, we are good!”. It’s horrible that others’ misery makes me happy but there is nothing I can do about it. I’m talking about parenting part only. Essentially, we all are in the same boat and I feel sorry for all of us at times.
Back to the no bake peanut butter pie. I started to experiment with healthy desserts more often than ever. Now I get it why there are so many dessert blogs. Those bloggers do not drink. Or do they do both?!
The whole idea of non-drinking for a year is a BIG mistake, like HUGE. Like not for a year! Who does that?! I know…Have no idea how it’s gonna work…Might take hell of a lot of pies for me. And that’s where the problem comes in => I keep making this pie and can’t keep my mouth away from it. Like 2 slices every night. I start thinking drinking wine is less calories…but this pie is sooo good.
In a quest of non-drinking I was joined by my BFF, Nicole. And she’s got 2 kids as well but she was way smarter than me => sober until March 1. Gosh, it sounds horrible but I swear we have no issues, just an experiment. So, last weekend I hauled this pie to her house. Only 1 out of 4 kids got to taste 1 x 1 inch piece that was carefully measured and carved out by Nicole. Yes, she loved it and so did the kid!
So, about this no bake peanut butter pie. Do you like peanut butter and banana sandwich? Do you like ice cream? You will like this pie then. => Creamy, rich, sweet. You keep it frozen and thaw for 20 minutes before serving, and then it’s just like ice cream => melts in your mouth and I, personally, close my eyes.
The crust. Delicious nutty crust with a touch of cinnamon wrapping up that creamy filling => I died. It’s gluten free, vegan and sans all the cr@p found in a store bought Graham crust that is usually used for no bake pies. I despise preservatives and any chemicals in our food. I would rather eat more calories and real food, than all those “skinny” chemical things. I’m a strong believer GMOs are behind many cancer and autism cases today. And the filling. Have you ever pureed bananas? It’s pure vegan ice cream => rich and naturally sweet. Add peanut butter => richer and creamier ice cream. I don’t know what else to say. Like who doesn’t like ice cream?! My kids are “weird” and do not like cupcakes and cakes (me jumping in the air “YES!”), me too…shhhhh. But ice cream and pop corn and wine (for mom) … bring it on.
It’s embarrassing but I lie to my kids and say “Let’s have an ice cream pie for snack” => 3PM tea time, sprinkle extra chocolate chips on top for the kiddos, and then cut a slice for me, and we close our eyes (kids too), and then we go crazy discussing how awesome it is. I know, ice cream is probably not a recommended snack by any health authority but this no bake peanut butter pie totally qualifies to be THE ONE – nuts, peanut butter and bananas. Now go ahead and judge me. I visualize that “You can’t scare me” image of a mother. As a stay-at-home/soccer/suburban/lucky mom I get judged a lot, so really you can’t scare me.
Now, I just need to put some duct tape on my mouth to stop me from eating this pie.
- 1 cup walnuts or pecans
- 1 cup cashews
- 2 tbsp raw honey or maple syrup
- 3 - 4 tbsp almond, rice or soy milk
- 2 tsp pure vanilla extract
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup organic peanut butter, unsalted (if using salted omit salt)
- 3 medium bananas, ripe (yellow)
- 3 tbsp almond, rice or soy milk
- 2 tsp pure vanilla extract
- 1/4 tsp salt
- 1/3 cup dark chocolate chips, mini or regular (optional)
- To make the crust, add Crust Ingredients to a food processor and process until a ball of dough forms, stopping and scraping the sides of the bowl. Start with a few tablespoons of almond milk and add more if necessary to bring to a desired consistency. Be careful not to over process the crust into a nut butter. Transfer the dough to a 9" pie dish and flatten on the bottom and sides with your hands to make a pie shell. You can make a pretty rim using the fork.
- Give food processor a rinse, wipe with a towel and add Filling Ingredients. Process until smooth, pausing and scraping the sides of the bowl. Pour filling into the prepared crust and smooth the top with a spatula. Sprinkle with chocolate chips (optional), cover with plastic wrap and freeze for 3-4 hours or until frozen. Thaw on a counter for about 30 minutes before slicing and serve.
