I started to experiment with healthy desserts more often than ever – no bake Nutella pie, no bake chocolate pie recipe with berries and healthy pumpkin pie. Do you like peanut butter and banana sandwich? Do you like ice cream? You will like this healthy peanut butter pie then. It’s creamy, rich, and sweet. You keep it frozen and thaw for 20 minutes before serving, and then it’s just like ice cream – it melts in your mouth and I, personally, close my eyes.

As my life gets busier, my recipes seem to get more simple. I think you and me are on the same page. Recently, you confirmed what I suspected – we share the same addiction – Mr. Crock Pot. healthy turkey chili, healthy slow cooker pulled pork, then chicken, rice & mushroom soup => all big love from you, guys. I should see if I can get a few crock pots for a giveaway for you. Took a note. How do you know your life is busy?! It’s when…

Oh my goodness. As my brain is melting and hands are shaking, nearing the 30 Clean Quick Dinner Recipes eBook publication date this Sunday, I really wasn’t going to post any recipe until Sunday. Simply just because I haven’t taken pictures of any recipes in the last 10 days. Has it been that long?! Whooooaaaa. I had wonderful Alex at home cooking for us. Yes, he is that good and all mine.:) But then I felt wrong and guilty for teasing you with my skinny cheesecake photos on…

Stuffed mushroom caps with mushroom stems, parsley and 2 kinds of cheese – fresh Parmigiano Reggiano and Mozzarella. You really do not need too many ingredients to make this light, filling and full of flavour party appetizer. It is important to choose fresh and firm white or brown mushrooms. I bought this 20 pack at Costco. I’m all pictures rather than words today. Do not rinse them but rather wipe with damp paper towel. This way, mushrooms won’t soak up extra water and become soggy. Just pull out…

Really I can eat only so many cookies, cranberry orange bread and caramel popcorn. Even if it’s all healthy. Besides being married to Alex for over 8 years (w.o.w), I’m married to my veggies. Lately, we ran out of my mom’s supply of organic and free venison (she kinda hunts), and been trying to eat more veggies. Truth be told, it’s cheaper and healthier. Yep, I refuse to buy GMO corn and soy fed meat and it makes me feel better by saving a cow or two….

Oatmeal cookies are one of my favourite treats: healthy oatmeal cookies recipe, sugar free oatmeal cookies, or healthy no bake oatmeal cookies – I love them all. And I can’t control myself near dark chocolate. I eat peanut butter for breakfast every day. Coconut oil – can’t get enough of it. Alex uses it even for cooking steak. And I recently found these Bob’s Red Mill Quick Cooking Steel Cut Oats. So really, I had all ingredients on hand to put these cookies together for us. And another great…

Lately, I have been making baby greens salad with pomegranate and kids eating them. The poms, not the salads. I don’t have magic kids who eat kale salads. So, a lot of pommies. I guess because it’s Alex “deconstructing” them and not me. He Googled the how-to video. I don’t know where to find it.;) And lately, I have been cooking vegan…um, a lot – this Healthy Caramel Popcorn, those Almond Flour Thumbprint Cookies and now this salad. Many people are not the fans of kale in salads, or kale…

This healthy caramel popcorn is the bomb dot com. It turned out PERFECT = sweet caramel sauce coating each and every crispy popped kernel. It’s going down my mouth too easy. This clean, vegan and gluten free sweet popcorn costs a fraction and is healthy. Plus it’s easy to make at home. My biggest issue with commercial popcorn is that it’s full of artificial stuff. Problem solved. Recently I said good bye to microwave popcorn bags and welcomed stovetop organic popcorn into my life. It might be no news to…
