Well, hello there. I’m back. I disappeared from here for like 4 days, which is unusual for me. I feel like Friday – Sunday, and even Monday this week, have been a blur. Yesterday was such a great day, not only because it was Valentine’s Day, but because my husband worked from home. I got things done around the house, Alex took boys for a run completely “killing” them, then he took Adam for immunizations and me and Kyle went grocery shopping for our celebratory easy shrimp tacos with slaw. Yesterday was a Family Day here in BC, combined with 5 days of no school and previous 2 snow days, feels like there is never any school in this country. We took advantage of a beautiful warm sunny day and went skiing which was fantastic. The drive was beautiful, we skied in sweaters and Alex took over our 6 year old (after my Sunday’s mental breakdown haha) so it meant I could ski like a grown-up. After a Costco grocery haul last week, yesterday I went to a local health food store to stock up on “rare” items. I always buy whole chicken, organic at Costco or from my local farmer, because it is much cheaper than buying chicken parts. All my boys LOVE my grandma’s slow cooker chicken noodle soup and last time Alex went to Costco, he got a 2 pack of organic whole chickens. We got snowed in, I would say a few feet. I took this picture on Saturday during a walk and snow amount is double that today on Monday. Schools are closed and kids couldn’t be happier (and moms unhappier). Snow started falling on Friday morning, and that is when me and my friend, Katie, decided it was time to go to Costco to stock up on food before we die from hunger. Because it is totally possible in Canada in 2017.

In a true Thug Kitchen’s style, I should say holy f*** about this one pot chili mac with beer I made from their new cookbook Thug Kitchen 101 (reminds me of my pasta with cauliflower in terms of layering flavours with plant-based ingredients). I can’t declare that this sheet pan chicken and vegetables is the most exciting dish I ever produced, but that is exactly why I turned to a one pan dinner in the first place – I wasn’t very excited about cooking supper. The thing is that it works, in so many ways. So, I thought I would share although the process of roasting chicken, potatoes and broccoli might be the “I’ve been doing this forever” obvious to you, but I won’t know it until I share.
