Baby spinach, leafy kale, tiny chia seeds…All those are super foods and make this green stuff  > THE STUFF! Apple, cucumber and lemon are there for an extra health benefit but most importantly to make this smoothie drinkable. It tastes totally bearable and even delicious! I have no idea why I have been putting off baking these yellow bundles of joy bursting with fresh strawberries?! Made with only whole wheat flour, protein powder and no added sugar, you get a strawberry flavour with every muffin’s bite. I know why. If you are a baker you know how hard it is to get goods made with only whole wheat flour to rise. And secondly, whey protein could make muffins dry and rubbery. Ever since I posted my first protein bar recipe (peanut butter oatmeal protein bars) I wanted to make another one but higher in protein, lower in sugar and fat. And it’s not easy because nut bars rely on nut butter and sticky sugary liquids like agave and honey to hold them together. On my way to Los Cabos, while enjoying the breathtaking views, I finally had time to myself. What is your life about? For me, it’s all about creating memories. At the end of the day, that’s the only thing that stays with you forever and no one can take it away. I would be devastated if in 30-50 years I would not be able to close my eyes and smile.

I often get asked what do I do for workouts, where I work out and what equipment do I use. Guacamole salsa is one of the easiest and healthiest appetizers. Fresh tomatoes, diced red onion, freshly chopped cilantro… Adding more veggies will help to lower the fat from avocados, although this kind of fat is good for you! Only 256 calories and 7 WW points+ per 3/4 cup serving.

I have been craving some cheesy and hot healthy spinach dip for a while now…Over 5 years I would say. Generally, any spinach dip recipe calls for a lot of mayo and/or cream cheese.
