I got it all figured out for you, guys, when it comes to corn tortillas in this light & summery crustless zucchini quiche. Ready?! Nutritional facts of corn tortillas are similar to whole wheat tortillas. Shocking? I know! I’ve been missing out on these guys for the last 13 years. According to 3 fat chicks on a diet in a comparison based on calories, fat and ingredients list of whole wheat tortilla vs. corn, corn wins. Even a shorter list of ingredients makes sense, real food = corn and…

Juicy and fragrant, the best way to describe this lean and C.L.E.A.N summer burger made with 93% lean ground turkey, fresh cilantro, fragrant cumin and topped with Greek yogurt cilantro aioli. Only 206 calories and 5 WW Points+ per burger! After kids, I think food is the 2nd most beautiful thing in the world besides the world itself.

I’ve been dreaming about cleaner and more functional iFOODreal since a month after iFOODreal was born. No, Alex, I loved my old iFOODreal but I love my new one so much more! Healthy blueberry scones made with 3 times less butter and sugar than traditional recipe. White flour makes only 1/3 of the dough, substituted by steel cut oats and whole wheat flour. To make the scones moist I used Greek yogurt. Perfect Back to School snack. Confession: I have never made scones before but I’ve been buying Northern Gold steel cut oats from Costco for over a year. On a box, there is a blueberry scone recipe with 2/3 cup butter and 1/2 cup sugar. But I was intrigued…

I made this Mango Black Bean salad last year, when I started this blog. But old pictures didn’t do this salad’s justice. So, I’m bringing back life to an “old” recipe as hot summer days are perfect for making this completely vegetarian, vegan and gluten free salad. Rich in protein, complex carbohydrates, healthy fats and fiber this Clean Mango Black Bean Salad will keep you satisfied for hours. And guess what, it’s so juicy I even skipped the olive oil. Just use freshly squeezed lime juice instead of…

I live in a blueberry country, so we eat a lot of blueberries. New studies show that freezing doesn’t damage their delicate anthocyanin antioxidants, so I freeze blueberries in vacuum sealed Ziploc bags. In winter we just eat them plain frozen. Blueberries are awesome and are considered a superfood! Full of antioxidants more than any other fresh fruit. They boost up your immune system and prevent infections. Blueberries keep you young, prevent belly fat and help dissolve “bad” cholesterol.

When the weather gets hot, I don’t turn the oven or grill often. And I do not crave meat. Or when my fridge is almost empty, or I’m in a rush. Then I have Sriracha Avocado Salsa Toast. Simple, clean and vegetarian open faced sandwich – slices of avocado layered on a piece of toasted organic whole grain (Ezekiel, sprouted) bread, that is spreaded with mild salsa and drizzled with a few drops of Sriracha sauce.

Can’t believe it’s August 1 already?! On a good note, it means zucchinis are in full bloom and are available super cheap at your local market. A couple of nights ago, on the drive back from Pitt Lake, we stopped at a local fruit & veggie stand and I grabbed 5 lbs of these imperfectly perfect zucchinis. $1 per 1 lb. Love local non-GMO food! I’m a fan of Eggplant Parmigiana, but love zucchini so much more. A couple minutes of thinking and Light Zucchini Parmigiana Recipe was…

To me, an obvious healthy food enthusiast, there is nothing better than making a healthy dinner with fresh vegetables and herbs on a summer day. And this quinoa casserole is perfect for that. The flavours scream summer to me: black beans, corn, bell peppers, cilantro, scallions and coconut milk. A hybrid of modern Mexican and Thai cuisines. Makes a perfect easy, healthy, vegetarian and gluten free dinner!
