Happy Monday! If Monday can ever be happy?! I think Sunday night is worse.:) 2 weeks ago Canada celebrated Thanksgiving. Meet our dinner – healthy chicken thighs stuffed with feta and dill, rolled in Panko breadcrumbs and baked for only 25 minutes. Super easy chicken recipe! I haven’t done roll ups in years and was intimidated at first, for no reason. You don’t even need to use toothpicks – the roll ups won’t unroll.:) If you are like me and can’t handle eating huge turkey 2 months in…

I make pasta at least once a week. Kids love it and it’s easy. Healthy pasta recipes are quick, budget friendly and believe it or not can be healthy. This Skillet Greek Sausage Corkscrew Toss is no exception. Organic whole wheat pasta, tossed in light creamy sauce with all natural chicken sausage and fragrant bell peppers, sprinkled with fresh feta cheese and parsley. Dried oregano takes this dish to a new you, Greek Goddess, level!

Last night was a hot tub, wine and staring at the stars kind of night. Last night was here-is-your-child-daddy, as soon as Alex walked in the door kind of night. It was time to shut off, for me. I honestly had no idea 2nd kid makes a difference in life. LOL, he did! Fitness, healthy eating aka quinoa casseroles and those nights like yesterday keep me sane, while I’m fully enjoying the ride on a roller coaster of the sweetest years with my kids. Really?! These are the…

OMG, guys, I have a new favourite Sunday dinner! These soft pillows aka chicken lasagna roll ups made out of healthy brown rice pasta and filled with clean creamy chicken, artichoke and spinach filling. Topped with cheese and tomato sauce and baked. No crazy Alex stories today as this dish doesn’t involve fish. In Vancouver salmon fishing is huge in Fall and he has been quite pre-occupied with that and working. Somebody has to work, right?! Haha. Thank you to all of you for reading this blog and…

Creating classic yet healthy all time favourite mashed “potatoes” recipe, I had a few things in mind: Thanksgiving is upon us. If you don’t know, Thanksgiving in Canada is celebrated in the 1st half of October vs. at the end of November in the US. Every time I start looking for pumpkin in American stores at the end of August, I get weird blonde looks. I hate peeling vegetables. I wanted the mashers to be yellow. I was going after light, airy and fluffy texture. That’s why I…

The day Louise from Healthy Recipes Magazine was browsing Healthy Aperture and found me and my recipes, changed my life. Well, not in a way Alex and 2 kids changed my life, but still. Haha. She offered to publish my Coconut Cilantro Grilled Chicken in their magazine and I said a very dramatic “Yes”. Why not?! The magazine is totally up my alley, has beautiful design and Louise was sweet as a pea to work with.   Then when my recipe was published, she approached me and…

I have a nice problem to have – I’m buried in frozen salmon up to my ears. (Very!) Hypothetically speaking, if me and Alex ever would get divorced, it would be over his fishing or driving. Love him to bits.:) This peanut butter salmon was special for a special occasion. Alex caught it during our last trip to Tofino, while Olena was babysitting…again. But I didn’t complain much. 1. We don’t buy farmed fish. 2. This kind and size of salmon would cost $70 at the fish market, $120…

Hands down, this is the best clean pumpkin pie I ever had! It is quite easy to make delicious pie with a bunch of butter, flour and sugar. But when it comes to a clean dessert, it’s a challenge. I was up for it, although scared to death. In the last 3 days, I made 3 pumpkin pies. That’s why I want you to close your eyes and pretend you can’t see those small white dots of cream cheese. It was experiment #3 and a thought of making pumpkin…

Today is not a story day. Today is super awesome Thai turkey meatballs day! I got my new dishwasher that can even make Thai meatballs.:) In all seriousness, we have a deal: I make the meatballs and he does the dirty job. And he knows his job really well. Meatballs don’t have to be smothered in tomato sauce, nor they have to be simmered for hours. They can have your favourite Thai flavours, be cooked in a skillet, within 30 minutes. Clean dinner can be really ready that fast….
