I have a nice problem to have – I’m buried in frozen salmon up to my ears. (Very!) Hypothetically speaking, if me and Alex ever would get divorced, it would be over his fishing or driving. Hands down, this is the best clean pumpkin pie I ever had! It is quite easy to make delicious pie with a bunch of butter, flour and sugar. But when it comes to a clean dessert, it’s a challenge. Today is not a story day. Today is super awesome Thai turkey meatballs day! I got my new dishwasher that can even make Thai meatballs.:) In all seriousness, we have a deal: I make the meatballs and he does the dirty job. And he knows his job really well. Meatballs don’t have to be smothered in tomato sauce (hello, slow cooker porcupine meatballs), nor they have to be simmered for hours (hi, meatless meatballs). Pasta e Fagioli means beans and pasta –  slow cooker pasta e ravioli soup with kale in my world. And I can’t believe I have only 6 soup recipes on my blog so far. Whaaaaaat?! OMG, guys, this slow cooker pumpkin stew is phenomenal! Although it might be hard to tell what’s in my pumpkin stew, even if you stare at it for 20 minutes, it is awesome. Sunday. Today is a perfect day for muffins with blueberries, pumpkin and crumbs. It’s pouring rain and I’m sitting at Tim Hortons, sipping on green tea and feeling lucky. With wet showered hair, hungry from only lunch – pureed carrot-kale smoothie a.k.a green smoothie by Alex, and waiting for Kyle to finish the 3rd Birthday party of the month, I still feel awesome. If you don’t like yams or sweet potatoes, listen before you give up on them completely. The same story with squash – I didn’t care for it until Stovetop Squash Mac and Cheese happened. That pillowy soft sauce is addictive by the spoon, straight from the blender. Read the comments. Neither did I like yams until the last camping trip, when Christie pan fried them with oil, garlic and salt. They caramelized and became my favourite dessert for dinner. Seriously! Pumpkin, coconut oil+milk+flakes, pecans. No dairy, no eggs, no processed sugar. You got my full attention, pecan pumpkin bread. And you are perfect for school snacks too?! And kids like you?! Now you really have my attention! Pumpkin and coconut is a mind blowing combination. This easy vegan bread came out so flavourful and moist, soft and crunchy at same time! Chopped Edamame Caprese Salad. What is that?! All ingredients of a Caprese Salad are chopped and mixed with edamame beans for extra protein and just because I love them. Oh, and Persian cucumbers. Those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado. This superfood is full of healthy fats, so don’t worry.
