Pumpkin, coconut oil+milk+flakes, pecans. No dairy, no eggs, no processed sugar. You got my full attention, pecan pumpkin bread. And you are perfect for school snacks too?! And kids like you?! Now you really have my attention! Pumpkin and coconut is a mind blowing combination. This easy vegan bread came out so flavourful and moist, soft and crunchy at same time! I also added flaxseed for extra fiber and Omega 3 boost.

Chopped Edamame Caprese Salad. What is that?! All ingredients of a Caprese Salad are chopped and mixed with edamame beans for extra protein and just because I love them. Oh, and Persian cucumbers. Those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado. This superfood is full of healthy fats, so don’t worry.

A healthy version of so popular Chinese takeout dish – Bourbon Chicken. It is a hybrid of Chinese and Southern US cuisines and is named after Bourbon Street in New Orleans. I have never been a squash fan. Squash. Whaaaaat?! I just, honestly, didn’t know what to do with it and let’s be honest – do your kids like squash? I don’t cook separate meals, so I try to split the suffering between us and the kids 50/50. Yesterday, it was Adam’s turn to whine and nobody else’s. One weekday morning last week, while still in the summer mode full of beach times, school free and potty training less, I made the boys these crunchy, fluffy and moist whole wheat pancakes. How was your long weekend? Mine was extremely busy with painting our house’s trim, entertaining and kids. Being from Ukraine, I ate a lot of cabbage rolls in my life. My grandma used to make the best cabbage rolls and they were simple. Over the years in Canada, I have tasted some store-bought and deli made cabbage rolls. They were small, full of rice and bacon and made with sour cabbage. Healthy mango granola bars, just in time for back-to-school/work season. Are you ready? I’m sooooooo ready for school, it’s about time. At the end of summer, when vegetables and herbs are in abundance, I love to make a vegetable ratatouille. It’s fast, easy and an extremely fresh vegetarian dish. And with a little bit of balsamic vinegar and a hottie pepper, you get a ratatouille with a kick. Can be a main meal or a side.
