I told you I was going to have a Meatless Monday and 1 vegan day a week. Yep, here we go… I made these vegan, vegetarian and gluten free Peanut Butter & Quinoa Protein Balls the other day. Yum and made with yams… I also made Pesto No Pasta Spaghetti the same day and will post the recipe shortly. Alex tried it, said it’s healthy and proceeded with his Thai takeout. LOL. He is not as much of a health nut like me, but still super healthy.

Oh boy, this one is not easy. I mean not easy for me to write this post, but good news is, it’s quite easy to choose a good domain name. Let’s call it Greena Colada…I’m in a mood of name calling today…And talking…Go ahead. Get addicted. Guilt-free. Extremely healthy and addictively delicious. If you are tired of regular blah hard core green smoothie, try this one for  a change. I promise you won’t taste kale. It’s yummy! Very springy, summery and tropical. I get tired of my Magic Bullet Green Smoothie. Lately I’ve been using a lot of coconut milk in my recipes and this smoothie is no exception.

Skinny Orange Brown Rice

Happy Meatless Monday! Brown rice is one of the healthiest side dishes along with quinoa, farro, buckwheat and oats. Switching from white rice to brown adds fiber to your diet and keeps you full longer. It takes time to get used to it but once you do, you will be happy you did.

Healthy & No Oil Salad Dressing

Yes, you heard it right. Oil free, just 4 ingredients and ready in seconds. Healthy and easy salad dressing made with ingredients you probably have on hand right now. Also gluten free, vegetarian and vegan. Super raw food! And the calorie count is ridiculous…36! For the whole small jar. I don’t know about you but I always have fresh garlic, a jar of sliced hot banana peppers (for sandwiches), a bunch of parsley (one of my staple herbs) and …water on hand. You should have water for sure.:)

Fresh Parmesan Green Beans Recipe

Crunchy fresh green beans made with roasted garlic and coated in melted parmesan cheese. These are perfect any time of the year and especially for the BBQ season. Vegetarian and gluten free. It’s spring in Vancouver and these beans scream spring and healthy to me. I love french green beans from Costco. They are thin and already trimmed. But any kind of green beans will work.
