OMG, guys, I have a new favourite Sunday dinner! These soft pillows aka chicken lasagna roll ups made out of healthy brown rice pasta and filled with clean creamy chicken, artichoke and spinach filling. Topped with cheese and tomato sauce and baked. And if you would like to skip pasta but enjoy the taste of lasagna, try my zucchini lasagna or stovetop zucchini noodles. Creating classic yet healthy all time favourite mashed potatoes recipe, I had a few things in mind: Thanksgiving is upon us. I have a nice problem to have – I’m buried in frozen salmon up to my ears. (Very!) Hypothetically speaking, if me and Alex ever would get divorced, it would be over his fishing or driving. Hands down, this is the best healthy pumpkin pie I ever had! It is quite easy to make delicious pie with a bunch of butter, flour and sugar. But when it comes to a clean dessert, it’s a challenge. Today is not a story day. Today is super awesome Thai turkey meatballs day! I got my new dishwasher that can even make Thai meatballs.:) In all seriousness, we have a deal: I make the meatballs and he does the dirty job. And he knows his job really well. Pasta e Fagioli means beans and pasta –  slow cooker pasta e ravioli soup with kale in my world. And I can’t believe I have only 6 soup recipes on my blog so far. Whaaaaaat?! OMG, guys, this slow cooker pumpkin stew is phenomenal! Although it might be hard to tell what’s in my pumpkin stew, even if you stare at it for 20 minutes, it is awesome. Sweet, savoury and cozy pumpkin stew with chicken, quinoa, sweet potatoes and artichokes. Screaming yellow cheesy healthy chicken pasta bake with corn, baked to perfection with cheeeeese, sprinkled with more cheese and fresh herbs. I had ears of corn laying in my fridge, still in hulk, which I’m too lazy to peel off at the market. It was starting to go bad. And I had chicken in the freezer. If you don’t like yams or sweet potatoes, listen before you give up on them completely. The same story with squash – I didn’t care for it until Stovetop Squash Mac and Cheese happened. That pillowy soft sauce is addictive by the spoon, straight from the blender. Read the comments. Neither did I like yams until the last camping trip, when Christie pan fried them with oil, garlic and salt. They caramelized and became my favourite dessert for dinner. Seriously!
