I have been craving some cheesy and hot healthy spinach dip for a while now…Over 5 years I would say. Generally, any spinach dip recipe calls for a lot of mayo and/or cream cheese. So I have been avoiding it and honestly was super scared to make it. See, I’m not an appetizer girl because growing up we never served them, however nowadays I appreciate a healthy serving of baked spinach feta dip, eggplant feta dip or spinach and feta dip with shrimp accompanied by a glass of wine.

Pan fried green beans made with roasted garlic and coated in melted parmesan cheese. These are perfect any time of the year and especially for the BBQ season. It’s spring in Vancouver and these garlic Parmesan green beans scream spring and healthy to me. I love french green beans from Costco – they are thin and already trimmed, perfect for making 4 ingredient green beans and chicken on a busy weeknight. But any kind of green beans will work, like scarlet runner I used in creamy green beans recipe.

These cheesy green beans were supposed to be cheesy and bubbly. And quick, easy & low fat vegetarian recipe. And that’s exactly how they turned out. French style green beans and cauliflower covered in cheese sauce made with garlic and paprika. Healthy vegetarian recipe that kids will love. Moms will love it too: 199 calories & 5 Weight Watchers points+! Very cheesy… And bubbly…

And yes, it comes with healthy cream cheese frosting on top! Healthy, skinny and kid friendly too! No 2 cups of sugar, no oil, no white flour, no egg yolks. Just black beans, pumpkin puree, Greek yogurt and egg whites among the ingredients in this delicious and moist black bean chocolate cake.

Ah, it’s been wonderful! Where do I begin?! My mom has been visiting so I really was able to do some wonderful things that I usually am not able to do. Like go for a run by myself, go tanning and visit Seattle! The whole weekend, by ourselves! No strollers, sippy cups and diapers in my suitcase this time. And no worries cause when my mom is taking care of my house and kids, it’s all taken care of! She is the best! THANK YOU, MOM!!!

In a single month of February I have made chia pudding at least 8 times: vanilla chia pudding, raspberry chia pudding and papaya chia pudding. I think I’m done for now. My family is begging me to stop.:) First, I test the recipe. If it’s good I remake it, take pictures and post it here. Sometimes I test the recipes 3 times. It’s rare but it happens. The Greek classic without the guilt and still full of flavour – crustless spinach feta quiche. High in protein, calcium & vitamin C. Only 110 calories and 3 WW points +. Essentially, it is unwrapped spanakopita baked as a pie. Just the filling, no pastry. Made with fresh herbs, light feta cheese and frozen spinach, this pie is a great healthy alternative to green cupcakes this St. Patrick’s Day.
