My mom is visiting here for 10 days, so I’m taking advantage of the situation as much as I can.:) On Monday morning I walked my oldest son to school without my 2 year old in tow. It was very unusual and different for me. As soon as we left the house this view opened up. The heat coming from houses on a sunny crispy morning with the mountains on the background – gorgeous! I couldn’t get enough of it but it was just a beginning!

I will be short and sweet today.:) Literally sweet because I rolled 32 of coconut protein balls today and was totally covered in coconut flakes and sticky dough. But I’m not complaining. It took only 20 minutes from start to finish. These coconut protein balls make great pre or post workout snack. Just like this Slimming Blueberry Protein Shake or Guilt-Free Chocolate Protein Shake. Another quinoa recipe. Yes, I’m on a quinoa roll this week. I already made cilantro lime quinoa salad, now this lemon quinoa salad. Can’t help it. It just happens! I keep making quinoa. Quinoa salad with cherry tomatoes, fresh cucumber and ripe avocado…drizzled with freshly squeezed lime juice and sprinkled with freshly chopped cilantro. Screams summer in January to me! This baked white fish recipe is one of my mom’s recipes. Adapted, lightened up, non-fried…What else?! Why? Hold your breath…Original recipe calls for 2 cups of mayo. . Homemade protein bar is my saver when I’m shopping, out with the kids or any time I know I won’t have access to a healthy food. As well is my Magic Bullet Green Smoothie (I add a scoop of brown rice protein powder to it and some people think its gross:)). Protein bars cover healthy fats, carbs and protein and the smoothie has my greens. I’m good to go! That’s why I never eat junk when I’m out.

One ingredient in this protein chocolate cake recipe will shock you but you’ll never be able to taste it.
