This dessert combines 2 of my favourite foods ever – dark chocolate and Greek yogurt. In other words, it’s all about no bake, crustless, low carb, easy and healthy (ier) mini cheesecakes made with Greek yogurt, low fat cream cheese and dark chocolate. Dark chocolate has a special place in my diet and heart.:) I prefer it over the cake or ice cream. It tastes exquisite and is so good for you.

Healthy Banana Bread Muffins Recipe with coconut flakes and carob chips – healthy treat without sacrificing the flavour or moisture. I basically have transformed my Easy Whole Wheat Banana Bread into muffins with slight modifications, of course.:) The trick was to reduce sugar amount while still ending up with moist muffins. They turned out well. I like the crunch from coconut flakes and bursts of natural sweetness from carob chips.

Another quinoa recipe. Yes, I’m on a quinoa roll this week. I already made cilantro lime quinoa salad, now this lemon quinoa salad. Can’t help it. It just happens! I keep making quinoa. Quinoa salad with cherry tomatoes, fresh cucumber and ripe avocado…drizzled with freshly squeezed lime juice and sprinkled with freshly chopped cilantro. Screams summer in January to me! In Russia, Chicken Rice Pilaf is called “plov”. It is basically chicken with rice, vegetables and spices. It is very popular in all former Soviet Union republics and is one of my favourite rice dishes. Traditionally it is made with lamb and comes from Uzbekistan. It has been adapted and made with chicken, pork and beef. I personally like it with chicken. It may seem hard to make but it’s not. Here are the rules for successful making of Chicken Rice Pilaf:

This baked white fish recipe is one of my mom’s recipes. Adapted, lightened up, non-fried…What else?! Why? Hold your breath…Original recipe calls for 2 cups of mayo. . Homemade protein bar is my saver when I’m shopping, out with the kids or any time I know I won’t have access to a healthy food. As well is my Magic Bullet Green Smoothie (I add a scoop of brown rice protein powder to it and some people think its gross:)). Protein bars cover healthy fats, carbs and protein and the smoothie has my greens. I’m good to go! That’s why I never eat junk when I’m out.
