Last summer our entire backyard was undergoing major renovation and grill was sitting in the middle of a dying lawn next to a hottub. Obviously, we didn’t grill all summer. On Monday we celebrated Victoria Day in Canada. On Thursday before I made this strawberry rhubarb coconut ice cream which we have been enjoying over the extra long weekend burning off calories in-between scoops. Then it was all gone because it was so-so good and healthy compared to any store-bought ice cream. Dairy free, vegan, gluten free and refined sugars free. Clean eating heaven! On Friday, we loaded bikes and these two and off we went. Running away from house chores to create memories for when in nursing home. Bellingham, WA – have you ever been? We live an hour away across the border. I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Like lemon mint vinaigrette in this vegan coleslaw with brown rice elbow macaroni, corn and edamame. It was delicious, crunchy and refreshing! I would be lying if I said I meant this dream-of-my-past-2-months lemon mint dressing to come out this colour. Growing up in Ukraine I remember eating this colour mashed split peas with liver patties at government subsidized daycare. I hated daycare only for that reason and will never forget that meal! We are starting to hit the trails, beach and parks more often. I mean when realistically possible. I did share my fair share of frustration re: doing what I vs. what my kids want to do. So, whenever we make somewhere in one piece we like to hit local cafes and restaurants for a meal/snack. How I truly felt on Mother’s Day and the day after… Motherhood is a beast. Not simply the hardest job in the world but a real bitch. A bitch with the worst mood swings. On Friday I posted the juiciest chicken burger recipe ever. And along with it I shared this sweet with heat prepared mustard recipe.
