This delicious salad is full of antioxidants, pairs well with almost everything and uses only one bowl to make.

I absolutely love salads that do not require dressing preparation on a side. Like this Simple Tomato Basil Salad – cherry tomatoes, fresh basil and the rest are the spices in your fridge/pantry. You throw everything together in a bowl and gently stir. The end result – delicious full of flavour summer salad full of antioxidants, vitamins A + C, and folic acid. And of course with a bit of a heat kick with Tabasco® Original Red Sauce.

While creating this recipe, I thought of my Ukrainian grandma’s ability to make delicious meals with minimal ingredients. She made the most delicious tomato salad ever – tomatoes, onions, unrefined sunflower oil, salt and pepper. I could never get enough of it as a kid. By the way, do you know that tomato is a fruit?! Probably that’s why I loved it that much. I just adore all fruit and I would easily trade it for a glass of wine but not for a cup of coffee though.:)

Since onion was not on the list of the 10 Ingredient Tabasco® challenge, I used Tabasco®. No brainer, right?! Tomatoes and basil are a match made in heaven. Also an eggplant pairs really well with the other two. Tossed with cider vinegar and a bit of a peppery sauce, this salad came out sweet, zesty and with a bit of heat.

And the best part of this salad is at the end – the juice. As a kid, I always used to dip an end piece of a fresh dark rye bread that I got at our tiny grocery store that day. Every day throughout the summer grandma would give me an exact change to buy a loaf of fresh bread that was delivered to the store. There was no set delivery time and we had no phones back then, so I either kept checking my store or asking the neighbours to see if the bread has been delivered. It would go stale or eaten within a few days. Our fridges were tiny, so really couldn’t freeze it either. Speaking about convenience and “hard” life today. I often think of my childhood, when I get into my leather heated seats car to drive to Costco and stock up with any food I want. Really?! Life must be hard for many of us!

Back to salad. Serving ideas are endless. Serve alongside Grilled Lemon Rosemary Chicken or Greek Style Chicken Kebabs. Also Spicy Cilantro Fish Kebabs pair nicely with this salad. In all honesty, I don’t worry too much about food pairings. I just make sure I cover all groups at almost every meal (some dinners are lighter) – carbs, protein and fats. Of course the meal should make sense but food is food. I wouldn’t serve Mediterranean Quinoa Salad with a Summertime Pasta Salad, but quite often my plate looks quite versatile. Especially with all the recipe testing that’s going on in my kitchen. So, don’t over think your meals. Just eat real food and enjoy every bite. I have been working really hard on eating slow and enjoying my meals. It’s hard!:) But I will keep trying. Enjoy the salad!

Simple Tomato Basil Salad

Ingredients

  • 1.5 lbs cherry tomatoes, cut in quarters
  • 2 tsp olive oil, extra virgin
  • 1 tsp apple cider vinegar
  • 1/2 tsp original Tabasco sauce
  • 1/4 cup basil, chopped
  • 3/4 tsp salt
  • 1/2 tsp ground black pepper

Directions

  1. Add all ingredients to a medium bowl and gently stir to combine. Serve chilled.
  2. Storage Instructions: Refrigerate covered for up to 24 hours.

    I love this! Easy and mostly stuff I grow in my garden, well, not Tabasco sauce. I don’t like dealing with side dressings either. Healthy, delicious and loaded in antioxidants. Yum. I could eat tomatoes the rest of my life and be happy and yes, trade them for coffee! But not fruit.

      Thank you.:) I’m thinking about getting a glass dressing shaker. You can pour from and store the dressing in it. Because seriously I hate making dressing.

    Beautiful photos. Tomatoes are my must-have vegetable (or fruit!), too. I add them to just about everything. A salad just isn’t a salad without them- and a salad of only them is awesome!

      lol. Funny, I know tomato is a fruit but I always associate it with vegetables. I agree. I always have tomatoes and cucumbers on hand. It’s a second nature. Like apples and bananas. I don’t even add them to my shopping list.
