Chickpea Avocado Salad

This chickpea avocado salad is the best chickpea salad recipe I ever made – with tomato, avocado, cucumber and simple dressing consisting of olive oil, salt and freshly cracked pepper; with red onion slices big enough for kids to pick out and adults to enjoy. The salad is so hearty, it can be a main course for lunch, mixed with quinoa or pasta for dinner, or a potluck star. This chickpea avocado salad recipe is similar to my other hearty salads recipes: Mango Black Bean Salad, Creamy Mexican Kale Salad or…

Healthy Ramen Noodle Salad with Chicken

It has been a very rainy and cold spring so far, which I’m OK with. I might be biased after spending a month in the sunshine but I do like rain. It makes our PNW’s nature lush, streets clean and air fresh. Rain means I can spend endless hours of cooking (and cleaning up) without worrying about standing in a hot kitchen for hours. In the evening, there is nothing better than curling up with a real book in bed (not the case right now with our brand new…

Tuna Salad With Avocado and Mango

Yes, I went there – I took tuna salad and loaded it with a bunch of fruit, drizzled with tangy homemade full fat yogurt dressing and added a big handful of dill. Now I can enjoy more than just canned salmon salad recipe. Here is my beef with canned tuna – it is dry and flavourless. I’m not like my 10 year old who can eat tuna straight from the can, I think it is bizarre. I buy a 6 pack of tuna (see my healthy Costco shopping list) for kids’…

Sweet Potato and Eggs One Pan Dinner

These sweet potatoes and eggs. This one pan dinner came out of sheer desire to eat a wholesome dinner and my lack of energy. Kid have sports around dinner time, so I either make dinner before or after, and it gotta be quick. I’m exhausted either at 4PM or at 6:30PM. So tired that I decided to cut sweet potatoes in half instead of chopping. Similar to sweet potato skillet tired.

Avocado Greek Yogurt Dip with Buffalo Sauce

Warning: Completely random thoughts while whipping up majestic fluffy Buffalo avocado dip. Mixing romaine with hot sauce. Frank’s Red Hot sauce smells totally like a pub. Circa 2001. Along with beer, deep fryer’s grease and smoke. You could smoke in bars back then. How much of that did I inhale?! Hot sauce is yummy, the acidic vinegar smells gooooood. I am glad I didn’t add chicken. Anyone can just eat chicken. This dip should be totally veggie loaded. Shock the Super Bowl party food table. Whipping the yogurt with…

Farmers Market Kale Tacos

On Saturday we slept in. Can you believe it there was no hockey?! Wait, we did go to our friends’ boy lacrosse game and then to Boston Pizza for dinner later. So, not like a weekend without a rink. But before that Alex made a lazy brunch with like 15 eggs and then I headed out to the farmers market. To buy more eggs. It was pouring rain. Seriously, is it summer yet where you live?! El Niño definitely left us. It was like +14C. No wonder I was…

Avocado Bisque with Shrimp

OK, I didn’t particularly grow up eating cold soups in summer. There was one traditional chilled Ukrainian soup called “okroshka” made with kombucha type of drink (btw, I have mastered making kombucha from scratch at home), soma dairy (buttermilk or sour cream?), chopped ham and cucumbers…I believe. But even then grandma and mom never made it. My family was not a traditional Ukrainian family. We didn’t bake pies, spoke Russian at home and didn’t celebrate orthodox Christmas. It has always been different…I wasn’t allowed to eat food at the markets…

Spicy Chicken Burger Recipe

Well, today is Friday and perfect burger time. Healthy salmon burger recipe with red lentils, black bean zucchini burger, sweet potato burger or a juicy spicy chicken burger with mashed avocado and sweet with heat prepared mustard recipe? You pick. If you are not Canadian you might not know this sauce. No, it is not the sweet heat BBQ sauce I found in Google. I do not think there is anything like this in the US or is there?! Sweet with heat mustard is basically a combo of yellow…

Canned Salmon Salad Recipe

After revealing my love for wild canned salmon, I felt like it was just about time to share my favourite canned salmon salad recipe. In the last year, I found myself buying packs of canned salmon and tuna every Costco trip. I blame it on kids’ hockey which leaves me lifeless by the time weekend rolls in. Anyways… Technically, canned fish is clean food. Yes it is canned in BPA cans and processed but technically it just has been cooked and preserved with salt and water. So, in my…

Avocado Mint Fudge Bars

I seem to be always behind the masses including avocado fudge and coconut oil fudge. I could never play a team sport. I hated team projects at university. I think I could never work for someone either. I really like to write and sing my own tune and so far it has worked for me. Christmas just passed and here I am with avocado peppermint fudge bars in January. Or I see so many food websites posting recipe videos and I love watching them (do you?) but inside I feel…
