Shrimp Avocado Tomato Salad with Greek Yogurt Dressing

I had a hard time naming this shrimp avocado tomato salad recipe because so much is going on here. We got juicy shrimp, creamy avocado, sweet grape tomatoes, crunchy bell peppers and cucumbers, fresh cilantro all dressed in a scrumptious garlicky and tangy Greek yogurt dressing. Fresh, creamy and so summery. I want summer to be here now! 2 months to go. Sigh. I can feel summer is almost here – we put our tent trailer for sale. Yep, I lasted one season. I decided to be a…

Cilantro Lime Cauliflower with Avocado

I used to hate cauliflower. Then I saw how many of you guys like it. I made Roasted Garlic & Parmesan Cauliflower and then my cauliflower world was totally rocked by this Cauliflower Crust Pizza Recipe. Cauliflower is white, mild in taste and low in calories. Neither did I like yams until the last camping trip, when Christie pan fried them with oil, garlic and salt. They caramelized and became my favourite dessert for dinner. Seriously! And that’s exactly how I cooked my yams for this…

Simple, clean and vegetarian open faced sandwich – slices of avocado layered on a piece of toasted organic whole grain (Ezekiel, sprouted) bread, that is spreaded with mild salsa and drizzled with a few drops of Sriracha sauce.

Greek Yogurt Guacamole

Greek yogurt adds amazing creaminess and extra protein to a guacamole, not to mention it prevents this traditional easy Mexican appetizer from browning for a least 24 hours, making it perfect for a potluck or a busy weekend ahead. Looking for more make ahead and easy to transport crowd…
