Juicy Spinach Chicken Quinoa Casserole

I am not sure word “juicy” is the most appropriate for a casserole but “moist” sounds even worse. So, I am going with “juicy” to let you know that this chicken quinoa casserole is not dry which is often the case with quinoa bake recipes. I didn’t think word “creamy” was appropriate either because I barely used any dairy. And still this healthy casserole is so moist from zucchini, full of basil flavour and is protein and veggie packed. It all started with a whole chicken… A few…

Chicken and Whole Wheat Spaghetti Recipe

This 30 minute one pot healthy pasta recipe is sponsored by Texture. Whole wheat spaghetti is the most cooked type of pasta in my kitchen. For two good reasons. Reason #1 – Costco. It sells the largest most affordable giant box of organic noodles. Reason #2 – kids. They particularly love spaghetti. I don’t think they even know what white pasta tastes like so we have no problem with more nutritious whole wheat. So, on Wednesday was whole wheat spaghetti recipe turn…after lentils, brown rice and quinoa it…

Lime Basil Grilled Zucchini

I love to grill zucchini with whatever I have on hand. Usually we do garlic, oil, salt and pepper. I am sure you completely understand why. But I have done it so many times and plus I have this wonderful job “ifoodreal” that forces me to barely ever eat the same food twice. Joking, I re-cook my own recipes. So, I was thinking curried grilled zucchini which could be wonderful or not. I have been spending many nights on our patio inhaling smells from next door, as you can…

Vegan Kale Pesto Sauce

Lots of foliage in this vegan kale pesto to kick off 2016 right! And it is vegan not because I’m vegan but because I do not like Parmesan cheese in a pesto. I would rather sprinkle it on top of pesto noodles. And eating less dairy and more vegetables is a plus anyways. Pesto sauce is a tough food item in my clean eating books. It is impossible to find organic or at least non-GMO in my neck of the woods. I have tried a few homemade versions…

Mango Slaw

I finally got around to make Salmon Burgers which I topped with this Mango Slaw, and which I promised to share when I posted Black Bean Zucchini Burgers. This week we eat everything mango because I grabbed a box for $10 at Costco. Mangos are on a Clean Fifteen List so I do not bother buying organic as we peel them anyways. Saving wherever I can to buy organic meat and dairy. My kids absolutely love mango! All of us do. I seem to be doing really well off of sugar,…

Simple Tomato Basil Salad

This delicious simple tomato salad is full of antioxidants, pairs well with almost everything and uses only one bowl to make. I absolutely love salads that do not require dressing preparation on a side. Like this Simple Tomato Basil Salad – cherry tomatoes, fresh basil and the rest are the spices in your fridge/pantry. You throw everything together in a bowl and gently stir. The end result – delicious full of flavour summer salad full of antioxidants, vitamins A + C, and folic acid. And of course with a bit…

Grilled Maple Basil Cherry Tomatoes

Recipe # 2 of the Tabasco 10 Ingredient (4 ingredient and no oven for me) Challenge. Yesterday I posted Grilled Spicy Cilantro Fish Kebabs, which in fact, would pair really well with these grilled cherry tomatoes. I will be honest, I’m not the greatest recipe seller. I wish all I could say is this recipe is amazeballs! Often I get readers doing a better job describing the recipe’s flavours and experience in the comments. I usually get a lightbulb on and go like “Yeah, why the heck didn’t I…

Clean Leftover Turkey Pesto Quesadillas Recipe

I couldn’t think of an easier and healthier way to use the leftover turkey – quesadillas. Easy to make and serve, and kids love them. With quesadillas I can be over with lunch/dinner in 30 minutes and there is usually plenty leftovers left. When I make them, I cook only one time that day. Leftover cooked turkey meat mixed with broccoli, dried cranberries, cheese and then stuffed inside whole wheat tortillas. Basil makes these quesadillas really stand out. A couple of days ago I tried to find preservative free…

Spaghetti Squash with Pesto Recipe

If you are a fan of pesto then you will like this recipe. I find pesto belongs to “love or hate it” foods. This pesto sauce is super healthy. Made with spinach, barely any oil and sunflower seeds instead of pine nuts. Sunflower seeds are lower in calories, fat and higher in protein than traditionally used pine nuts. That’s why I chose them.
