Black Bean and Rice Burritos

Holy burritos, I have burnt 8 out of 10 fingers while figuring out how to roll a whole wheat tortilla without breaking it! I completely understand why there are so many recipes with white flour tortillas but those recipes are not for us. No need for them either as I managed to roll these babies up good enough for freezing and my boys not giving me looks what’s on their plate. And these black bean and rice burritos were delicious, filled with all plant-based goodness!

Clean eating dinner recipes seem to be the hottest commodity on iFOODreal. Particularly one pan/pot meals with quinoa or vegetables. I mean, look at the “Popular Recipes” widget on the right. CrockPot Taco Soup

You can pull off this crockpot taco soup only with the ingredients from your pantry and freezer, and with minimal effort because it cooks itself in slow cooker. For toppings use what you have. Easy Quinoa Chili with Slow Cooker Option

I’m not vegan and am very picky with vegetarian meals, and I loved this vegetarian quinoa chili with a slow cooker option. Particularly using quinoa instead of ground meat was awesome! A bowl of bean and mushroom soup is so comforting on a rainy Fall day or a snowy Winter night. Meaty, hearty and a tad creamy, this soup is also healthy: full of fiber, protein and low in fat.
