Hearty Bean and Mushroom Soup

A bowl of bean and mushroom soup is so comforting on a rainy Fall day or a snowy Winter night. Meaty, hearty and a tad creamy, this soup is also healthy: full of fiber, protein and low in fat. I have also included a slow cooker version for those who are super busy. The soup also freezes extremely well.

One Pan Skinny Tex Mex Chicken and Zucchini

Chicken and zucchini…Summer is flying by so fast, I’m afraid I won’t have enough time to cook all the dishes I have in mind with summer’s fresh produce. I admit, I prefer grocery shopping to the clothes one. I can wonder aisles of food for hours. My preferred way to do it – on my own. Can you blame me?! Every time I enter my local farm market type of a grocery store, I’m about to faint. Local blueberries, zucchini, cherries, young potatoes, dill cucumbers, heirloom tomatoes, apricots…

Creamy Mexican Kale Salad

Oh, this Mexican kale salad is sooo good! A heat wave hit Vancouver and I have been spending every day at the beach. Plus, my mom has been visiting, which is a precious gift. Needless to say, it’s too hot and little time to cook. My new gas stove warms up the kitchen way faster than my old electric one. Hearty salads like Mango Black Bean Salad, Mexican Bean Salad Recipe and Chickpea Avocado Salad are my best friends right now. And this Mexican kale salad is on top of the list…

Ground Turkey Stew

As I am writing up this ground turkey stew recipe and finishing the last bowl of it, I’m thinking I should make stews more often. Definitely! Stew is healthy and quick stovetop meal that keeps well refrigerated for days. Plus, it’s so easy to control the macros: want more protein=> add more meat, want more veggies=> add greens, less carbs=> no problem, don’t add any if you wish. Try my slow cooker pumpkin stew with chicken and quinoa stew with beef. As I keep doing Insanity, I have to be creative…

Spaghetti Squash Boats Tex Mex

Oh-ehm-dzhee, guys. These spaghetti squash boats is one of the best dinners I made in a while (at least since my dinner eBook came out I haven’t posted many dinners)! The texture, the flavour, the smell and the calories…all to die for! What a great light dinner, and it wasn’t hard. I don’t do hard, I’m “lazy”. I had these 2 spaghetti squash laying in my fridge and no plan. I have made spaghetti squash casserole before and wanted to try the boats. Since this recipe came out, I…

Healthy 7 Layer Dip

Life is crazy and we try to unwind on weekends. With good food, good friends and with a glass of good wine. If hockey is on, Alex is all in. That means little boys are glued to TV too. I really have no choice but to like hockey. Hey, we are Canadians. We love hockey! Past weekend we did just that and part of the menu was this Healthy 7 Layer Dip Recipe. It was nice to bring a variety to the table with something fresh and vegetarian…

Crockpot Buffalo Chicken Chili

When I hear buffalo chicken, I immediately think of buffalo wings and Frank’s Red Hot sauce. Then celery and carrots come to mind. So, imagine all of that cooked in a slow cooker and making the yummiest Crockpot Buffalo Chicken Chili. I think, we all have to thank Rachel Ray for inventing this crockpot chicken chili. It’s all over the net. But I made my own version – clean and simple. As I always do, when trying to recreate the recipe. I just look at the ingredients list…

Chili Chicken, Kale and Quinoa Casserole

Last night was a hot tub, wine and staring at the stars kind of night. Last night was here-is-your-child-daddy, as soon as Alex walked in the door kind of night. It was time to shut off, for me. I honestly had no idea 2nd kid makes a difference in life. LOL, he did! Fitness, healthy eating a.k.a cheeseburger quinoa casserole, and those nights like yesterday keep me sane, while I’m fully enjoying the ride on a roller coaster of the sweetest years with my kids. Really?! These are…

Slow Cooker Pasta e Fagioli Soup with Kale

Pasta e Fagioli means beans and pasta –  slow cooker pasta e ravioli soup with kale in my world. And I can’t believe I have only 6 soup recipes on my blog so far. Whaaaaaat?! I grew up on soups and I cook them quite often: buckwheat soup, Ukrainian borscht, slow cooker chicken noodle soup. Soups are fast, cheap and a great way to use any leftovers. You know that half tomato, yesterday’s sausage and 2 days old pasta?! Instead of a garbage can, they go into Olena’s…

Crockpot Chicken Chili Queso

How was your long weekend? Mine was extremely busy with painting our house’s trim, entertaining and kids. But it was great and the weather helped.:) Amongst all the cooking I got done during the weekend, was this fragrant, creamy and cheesy Crock Pot Chicken Chili Con Queso – a hybrid of chicken chili and famous Tex Mex cheesy dip known as Chile Con Queso. Just to make sure we are on the same page, this recipe is not a dip. But rather an easy and clean main course…
