Sausage Quinoa with Poblanos

Nutrition Info is back at the bottom of recipes…I mean, I will do my best whenever I can.:) Boy, this sausage quinoa recipe has a kick. I originally wanted to make it with rice but because I also made rice pudding the same day (coming next), I chose quinoa. It was quite spicy, however if you are one of those who commented “I doubled the spices” on my Crock Pot Butter Chicken, you should be fine and might have to just half double poblanos here. I’m more of a mild girl and…

Summer Fried Brown Rice

I love making fried rice because sky is the limit in terms of ingredients and it is a great “fridge cleaner”. I made one mistake this time by making it in a wok because I simply forgot to use a large skillet to make the rice crispy. In a wok, it comes out more steamed than fried. And crispy rice is the most fun part – crunchy, oily and fried previously cooked rice. It can be fried in a wok in restaurants because the heat is so high but at home…

Sesame Cauliflower and Bell Peppers

10 minute Clean Eating side dish easy enough for a weeknight dinner. This recipe serves 4 people and because it was so amazing we had no leftovers. Kids loved it! One night I doubled the recipe and made a second batch for my neighbour who brought me a roasted unmedicated chicken from Pomme (West Coast natural foods store). So, that was dinner. I think kids had pasta as well. You could serve this Sesame Cauliflower and Bell Peppers on top of brown rice, quinoa or any whole grain…

Lighter Fajita Quesadillas Recipe

Quesadillas makes a quick lunch or dinner. I found a way to make them healthier with sprouted whole grain tortillas, only 2 tbsp of cheese and stuff as many veggies as I can. I left the choice of protein up to you – leftover chicken or turkey work great. I personally saw these quesadillas as a chance for a vegetarian dinner and used organic medium firm tofu. Because of so much flavour going on here, the kids thought tofu was chicken. And tofu is pretty tasteless on its own and absorbs flavours…

Eggplant Marinara with Pepper and Rice

Sautéed eggplant and bell peppers with simple marinara sauce and served over brown rice – a quick and healthy vegetarian dinner. Full of flavour and affordable too. This eggplant marinara was delish! I love eggplant and am completely puzzled why many people don’t. It’s highly underrated vegetable in America. Its texture makes a great substitute for meat. Once cooked, it develops tender texture and complex rich flavour. In my Ukrainian opinion, it tastes best with tomatoes, garlic and fresh herbs.:)

Balsamic Grilled Vegetables

Balsamic grilled vegetables have authentic Italian flavours – olive oil, balsamic vinegar, garlic and parsley/basil. Very similar to Ukrainian traditional flavours of dill and garlic, minus the balsamic vinegar. Commonly used in Ukrainian cooking oil is unrefined sunflower oil, similar in taste to a sesame oil, just not as concentrated. In this recipe, olive oil plays a role mainly of a moisturizer and balsamic vinegar adds a nice punch of flavour. My choice of vegetables were zucchini, bell peppers and white onion. White/brown mushrooms, Portobellos, eggplant or asparagus would be great as well….

Soba Noodle Stir Fry

My proof for stir fries is in numerous unique and healthy stir fry recipes I have made over the years: cabbage and carrots stir fry, buckwheat stir fry, frozen vegetables stir fry, broccoli mushroom stir fry, salmon stir fry and healthy beef stir fry. Healthy soba noodle stir fry is a no brainer. Just combine some protein, vegetables and healthy noodles, and you are good to go. Soba noodles are quick to cook, usually made of a whole grain like buckwheat, which means they provide more fiber than wheat or rice…
