Rice Stuffed Tomatoes with Enchilada Sauce

I hope you are not buying tomatoes at supermarket in September. OK, if you are, I hope you are making sure they are not from Mexico, in September. Because right now is prime tomato harvest season near you. Actually, ALL fruits and veggies coming down with a blasting speed, making me completely mad woman because I want to buy them ALL, and in fact I seem to be doing just that – see my last farmers market haul. I keep ordering produce by boxes in advance, out of…

Tex Mex Rice and Beans with Zucchini

Well, hello there. I’m back. I disappeared from here for like 4 days, which is unusual for me. I feel like Friday – Sunday, and even Monday this week, have been a blur. A good blur of happy family life but still a blur of hundred bank/car/mall/paperwork errands, kids’ hockey at 7AM and socializing with a bunch of screaming kids and the most fun adults. Which is all great because this is normalcy you crave once the real life problems strike! We all go through black and white phases in…

Black Bean Nachos

Woof, what a craziness this time of the year is. Alex suggests if I stop washing windows at same time as decluttering kitchen while decorating the house for Christmas, life will be much easier. I agree, in theory. So, really it is all my fault. I agree again. I have been really going with the flow and taking not one day at a time but one hour at a time. In other words, snacking on healthy rum balls, making kombucha from scratch and lunching with black bean nachos….

Butternut Squash Noodles Tex Mex Style

On Monday, February 29th, I woke up pissed. What does it have to do with a spiralized butternut squash noodles recipe? All and nothing. I was pissed at Sunday’s fiasco to go skiing only to find a fog, wind gusts and melting snow when we pulled up to the mountain. At Alex car’s dead battery so I had to drive him to the train station at 7AM. And at myself for being lazy and not working out last week. So, I was pissed, quietly pissed…

Quinoa Stuffed Eggplant Tex Mex Style

When I was a kid, August always meant an abundance of eggplant dishes at dinner table. That is when eggplant is in season in Ukraine and we better “stock up” our bodies with potassium because you won’t get it for another 11 months. There was no bananas which explains why 16 years later after immigration and I still can’t stop eating them. My favourite fruit ever! Anyways, traditional Ukrainian eggplant dishes consisted of panfried eggplant rounds dipped in flour, garlic, salt and pepper. Or the same rounds without flour but layered…

Creamy Black Bean Dip

We blinked and Fall is here! Summers are always intense and short. Get why?! Because summer lasts really only 2-3 months out of 12. So, yeah, it is short.:) I’m not sure I would want it to last longer though. Part of me is sad dinners at the lake are over but other part of me is happy about all things Fall: baking, crispy air, school, rain. I love any day in North America. Life is so easy here and worry free if you think about it on…

No Bake Black Bean Brownies

Don’t let anyone know these no bake brownies are made with black beans and applesauce, let them try first. I have heard it many times from my readers and friends, they say none of their family or friends can taste black beans and brownies are usually gone in no time.

Black Bean Spaghetti with Garlic Shrimp Recipe

Have you ever heard of black bean spaghetti? I first discovered black bean pasta at Costco a year ago. Organic and gluten free, they contain 25 g of protein and 12 g of fiber per serving. Another lighter alternative to pasta besides zucchini noodles with chicken. The taste is very good, the texture is light and cooking time is 7 minutes. The texture and taste is of course different from wheat pasta but very satisfying. Nothing weird like those tofu shirataki noodles.

Lighter Fajita Quesadillas Recipe

Quesadillas makes a quick lunch or dinner. I found a way to make them healthier with sprouted whole grain tortillas, only 2 tbsp of cheese and stuff as many veggies as I can. I left the choice of protein up to you – leftover chicken or turkey work great. I personally saw these quesadillas as a chance for a vegetarian dinner and used organic medium firm tofu. Because of so much flavour going on here, the kids thought tofu was chicken. And tofu is pretty tasteless on its own and absorbs flavours…
