Healthy Chocolate Bread with Spelt Flour

Since we are leaving on a month long tropical adventure in a few days, I’m trying not to grocery shop and use up everything I have. In a very long list of draft recipes (about 100) I had this chocolate coconut bread I tested a few years back and since have abandoned. I remember it turned out very moist but texture needed work. Kids have busy week of sports, so I needed fuel snacks, desperately. Healthy chocolate bread made with a can of coconut milk to the rescue, yep….

No Bake Nutella Pie

After promising this no bake nutella pie recipe a bazillion of times, it is finally here. It ended up being easier said than done in December. Amazing how time gets “eaten” by what we have to do vs. what we would rather do. But I finally did it – “baked”, photographed and “gave birth” online to this healthy chocolate hazelnut pie. And if you are not into chocolate, you might like my healthy peanut butter pie, no bake banana cream pie or no bake pumpkin pie. Prepare to be amazed…

Healthy Chocolate Coconut Balls

I came up with these healthy chocolate coconut balls during crazy weeks of no school. I wanted a dark chocolate treat without the guilt. Some days I do need a chocolate boost to survive past my desired bedtime until the real one happens. These balls are super easy to make and no food processor is required like many balls recipes call for. Everything is mixed in one bowl or even a pot you melt coconut oil in. Many of you told me that these balls remind you healthy haystacks….

Chocolate Coconut Flour Muffins

Remember banana coconut flour bread and 9 lbs of coconut flour? You would think the situation would be getting better and every month I would be using more and more of it slowly diminishing my coconut flour barrel. That is not the case. More than that, I am now a hoarder of 13 lbs of coconut flour. Hence, chocolate coconut flour muffins. There are 2 underlying reasons why: My neighbour gave me her bag of Costco’s coconut flour. She had no idea what to do with it and was…

Chocolate Quinoa Muffins

I would go for one of these chocolate quinoa muffins in a heartbeat right now but they are all gone. We ate some, kids-neighbours ate some and friends-neighbours ate some. Honestly, I do not run with a tray of freshly baked goodies in my hands, towel on a shoulder and tripping on Lego offering muffins to whoever comes in the door.

Coconut Oil Fudge

So, this coconut oil fudge. I have not had added sugar, even maple syrup or honey for 3 weeks now. This Halloween I decided not to even have 1 candy because when they say sugar is more addicting than crack that applies to me. If I don’t have it, I don’t crave it. Otherwise, I could easily eat 2-3 servings of ice cream or 1 chocolate bar. So, on Halloween I had my wine and a few of these fudge bars. They were so good, later on I turned the…

Healthy Zucchini Brownies

I baked these healthy zucchini brownies 3 times last week. Everyone loved them so much but needless to say we are “brownied out”. The rest went to the freezer. Made with coconut oil, raw honey and whole wheat flour these healthy zucchini brownies are super healthy. And I’m the one who doesn’t run away from organic wheat.:) It was my first time making zucchini brownies but after enjoying black bean brownies recipe so much, I had a feeling I would love these too. Black bean brownies are very fudgy where…

No Bake Black Bean Brownies

Don’t let anyone know these no bake brownies are made with black beans and applesauce, let them try first. I have heard it many times from my readers and friends, they say none of their family or friends can taste black beans and brownies are usually gone in no time.

Healthy Chocolate Ice Cream

Light, creamy and full of chocolate, this 3 ingredient healthy chocolate ice cream is our family’s favourite that I have been making all winter long. Just been waiting for hot weather to hit our neck of the woods to share it with you. I find this ice cream easier to make than a traditional dairy one, and I believe it is tastier and healthier. My kids absolutely LOVE ice cream and do not object a slight coconut-y flavour of coconut mango ice cream and vegan vanilla ice cream I make.

Cacao Nibs Brownie Bites Recipe

If you need a late afternoon kick in the butt, these Cacao Nibs Brownie Bites are for you. I have an issue with a word “balls” lately, for example moist balls, let’s stick to bites… So, this cacao nibs recipe is naturally sweetened and full of a caffeine kick from raw cacao powder and cacao nibs crunch. I just love the crunch, so more brain satisfying than just a smooth snack. Skip metabolism and sleep scrutinizing cup of coffee, and stay away from messing with your brain processed sugars. Have…
