Cauliflower Shepherd’s Pie

Cauliflower Shepherd’s Pie is essentially a dog pile (a new word I learnt during Kyle’s last hockey game) of veggies. And just to forewarn you – I’m not a potato hater but rather lover (see my last weekend eats). How can I be Ukrainian and hate potatoes when we ate them every day?! Potatoes are not bad for you. I just wanted to have fun with cauliflower. And honestly I thought I had a genius new recipe on hands which proved to be a nonsense once I did my…

Buffalo Cauliflower Soup

Buffalo cauliflower soup. Everywhere I look I see soup. I mean farmers market, grocery store and fridge. Waking up it is dark. Coming from the rink I am cold. Outside is so wet can’t even open a hottub. It is pouring cats and dogs in Vancouver non-stop. End of October is not the time to visit beautiful PNW. Let me tell you. Neither is November. It is still beautiful but don’t come. I have looked up tickets to Los Cabos in March and I need to rob a bank….

Pasta with Cauliflower and Pumpkin Seeds

Today I cooked like Alex. Whenever he has to cook (please note has, Alex doesn’t love to cook) all his meals are made in a pot or a skillet with onions and garlic. All of them, and now my lentil casserole as well. And they are type of a stir fry. It is a typical Russian way of cooking. I remember my grandma’s hands always smelled like onions. In fact, I am typing with onion fingers right now. And even watermelon tasting like onions lol. I still cringe if…

Peanut Butter Rice with Cruciferous Vegetables

On Saturday I missed farmers market because we went hiking on Mount Baker again. It was our dear Calgary friends’ last day in Vancouver so we wanted to make it memorable. Plus Alex just got back from Israel after one of the most stressful weeks of his life (see last post). He wanted a breath of fresh air and to resume normal life ASAP. These two reasons were worth missing piles of cabbage, cauliflower and potatoes. I decided to catch up shopping at my grocery store’s organic section on Sunday….

Smashed Cauliflower Bites

I find March to June the worst months to shop for quality produce. I am already tired of squash, kale and citrus. Asparagus – I made broiled asparagus with garlic and vegan asparagus soup. I had enough of fragrant bathroom trips. For almost 3 weeks I couldn’t find organic apples and now that I did they cost an arm and a leg. As I glance through magazines and blogs mentioning spring’s produce bounty I am honestly puzzled where do those people live?! Or are they talking about new greenhouse’s crops? So, I am…

25 Cauliflower Rice Recipes in 30 Minutes

I thought we could all use some cauliflower rice recipes since we can all afford cauliflower now. I mean, did you see how much it cost a few months ago?! I explained in this chicken and cauliflower post why a tiny head of cauliflower cost as much as a pound of meat. I would bring it to the till a few times and cashiers asked me if I was sure. Must have been bad, so I left it. We (realistically my wonderful assistant, Eboni) scoured the internet for simple cauliflower rice recipes…

Teriyaki Chicken and Cauliflower Skillet

I made true clean eating, one pan teriyaki chicken and cauliflower. Served with brown rice or could be quinoa. No hoisin sauces, mirin and sake wines, and of course no yucky bottles of teriyaki sauce. Hence, the lighter brown colour of clean homemade teriyaki sauce sans loads of brown sugar. Basically, teriyaki chicken skillet for 1 % of North Americans => us #beproud. I love to veg up meals with bulky veggies because…for obvious reasons. You might also like my chicken curry with cauliflower.

Cauliflower Risotto

Eliminating added sugar (I mean honey and maple syrup) from my diet has worked very good  – I lost 2 lbs in the past month. So, I continue on cooking mostly savoury recipes. However, I finally perfected the best in the world banana bread made with whole wheat flour and only 1/3 cup honey. I had my 9 year old re-make it yesterday and it came out as beautiful and as delicious as Starbucks’ loaf. Somehow their baked goods look always so appetizing to me.

Cauliflower Mashed Potatoes

These Cauliflower Mashed Potatoes came out FANTASTIC!!! On a scale of 1 to 10, cauliflower taste = 0.5. Whoever came up with an idea for a cauliflower mash as a faux mashed potatoes is genius! You could easily swap it for mashed potatoes any time. I love mashed potatoes and eat them occasionally, more than that i na form of turkey bacon mashed potatoes, but I would make this for a lighter meal. Everything in moderation, my friends. And I’m so past the stage of deprivation. Mashed potatoes, bacon and…

Cauliflower Biscuits

I am on a cauliflower kick this week. Thai cauliflower rice, cauliflower biscuits…I just want to clarify something – I’m fully aware that these are not real biscuits. And so isn’t cauliflower pizza crust recipe really a pizza and cauliflower breadsticks aren’t actual breadsticks. 2015 is an era of everything mock and limited – cashew and cauliflower sauce instead of a dairy sauce, “gluten free” frozen peas and muffins made with 3 ingredients. Some substitutes I can take and some…Honestly, I find some things weird…Like, zucchini noodles with sun dried tomatoes cashew sauce,…
