Healthy broccoli cheese soup made silky smooth using only whole foods like potatoes and butternut squash. Am I good or am I good?! Butternut squash is bright orange that makes a healthy replacement for 2 cups of neon artificially coloured cheddar cheese. And potatoes, those white spuds, naturally they contain so much starch that no cups of flour, butter or heavy cream are necessary to produce world’s best, silky smooth and delicious healthy broccoli and cheese soup. Not that I’m against flour or butter, but the fact that…

One Pot Taco Pasta with Pumpkin

Good news is that if you are a pumpkin fan – you will appreciate hints of pumpkin in a cheesy pasta pot, and if you are not a pumpkin fan (like my kids) – you won’t taste it as much and can easily substitute with a can of tomato sauce. But I suggest you try making this one pot taco pasta with pumpkin because its fiber, potassium and vitamin C content are so beneficial for our heart health, and you can barely taste it. Not to mention creaminess…

Spaghetti Squash Casserole

Spaghetti squash mixed with organic cream of mushroom soup, tomato sauce, cheese and tender turkey pieces, then topped with crunchy Panko breadcrumb topping and baked until bubbly and golden. This spaghetti squash casserole was SO delicious, comforting and at same time guilt free. After trying spaghetti squash quiche with kale and mushrooms, I have experimented with  a few casseroles using spaghetti squash instead of traditional pasta (see vegetarian baked spaghetti squash casserole).

Spaghetti Squash Boats Tex Mex

These spaghetti squash boats is one of the best dinners I made. The texture, the flavour, the smell and the calories…all to die for! What a great light dinner, and it wasn’t hard. I had these 2 spaghetti squash laying in my fridge and no plan. I have made spaghetti squash casserole before and wanted to try the boats.

Cauliflower Biscuits

I am on a cauliflower kick this week – Thai cauliflower rice and cauliflower biscuits. I just want to clarify something – I’m fully aware that these are not real biscuits. And so isn’t cauliflower pizza crust recipe really a pizza and cauliflower breadsticks aren’t actual breadsticks. They don’t have a light airy fluffy texture but rather more of vegetable muffins or big cauliflower tots. They did resemble biscuits in a sense though and we all loved them. It was a nice change in our so beaten up menu. I wouldn’t make them often or…

Cauliflower Breadsticks

Low carb cauliflower bread recipe that is an alternative to traditional breadsticks. These homemade cauliflower breadsticks are flavourful, cheesy and with easy to follow step-by-step instructions. Yes, this recipe is foolproof, just like my so popular cauliflower pizza crust recipe. However, I won’t lie and warn you that it is a bit time consuming, so I highly suggest to double the recipe. But these cauliflower breadsticks will come out right, you will be able to pick them up by hand. I know you are wondering about that –…
