One Pot Taco Pasta with Pumpkin (Video)

Good news is that if you are a pumpkin fan – you will appreciate hints of pumpkin in a cheesy pasta pot, and if you are not a pumpkin fan (like my kids) – you won’t taste it as much and can easily substitute with a can of tomato sauce. But I suggest you try making this one pot taco pasta with pumpkin because its fiber, potassium and vitamin C content are so beneficial for our heart health, and you can barely taste it. Not to mention creaminess…

40 Healthy Spaghetti Squash Recipes

40 healthy spaghetti squash recipes including casseroles, boats, bowls and pasta, for real life without crazy amount of cheese and weird ingredients. I personally went through each recipe from other talented healthy cooks to make sure recipe is relatively easy, doesn’t contain a lot of ingredients, ingredients are simple, and spaghetti squash recipes are healthy because what is the point of eating spaghetti squash casserole if it’s loaded with 3 cups of cheese, right?! And although I haven’t tested every single recipe, I found at least one comment…

Spaghetti Squash Casserole

Spaghetti squash mixed with organic cream of mushroom soup, tomato sauce, cheese and tender turkey pieces, then topped with crunchy Panko breadcrumb topping and baked until bubbly and golden. This spaghetti squash casserole was SO delicious, comforting and at same time guilt free. After trying spaghetti squash quiche with kale and mushrooms, I have experimented with  a few casseroles using spaghetti squash instead of traditional pasta (see vegetarian baked spaghetti squash casserole).

Spaghetti Squash Boats Tex Mex

These spaghetti squash boats is one of the best dinners I made. The texture, the flavour, the smell and the calories…all to die for! What a great light dinner, and it wasn’t hard. I don’t do hard, I’m “lazy”. I had these 2 spaghetti squash laying in my fridge and no plan. I have made spaghetti squash casserole before and wanted to try the boats. Since this recipe came out, I created a few more spaghetti squash boats recipes: butter chicken spaghetti squash boats with coconut milk based traditional Indian sauce, chicken alfredo spaghetti…

Rice Stuffed Tomatoes with Enchilada Sauce

I hope you are not buying tomatoes at supermarket in September. OK, if you are, I hope you are making sure they are not from Mexico, in September. Because right now is prime tomato harvest season near you. Actually, ALL fruits and veggies coming down with a blasting speed, making me completely mad woman because I want to buy them ALL, and in fact I seem to be doing just that – see my last farmers market haul. I keep ordering produce by boxes in advance, out of…

Zucchini Lasagna

Comfort food lightened up with zucchini pasta “sheets” and made with simple 7 ingredients. I know there are many zucchini lasagna recipes out there but I thought I would share my healthy version simplified with store bought organic tomato sauce and without any extra steps to remove moisture from zucchini. Everything cooks in one pan and this recipe is quick enough to prepare even on a weeknight, just like my chicken zucchini with corn and zucchini bake with tomatoes and Parmesan recipes. My kids do not like zucchini, especially cooked (I…

Cheesy Cauliflower Rice and Zucchini

This cheesy cauliflower rice is a perfect way to use up summer’s bounty and “eat your vegetables” (and “have your cheese”). I came across “California snow” at Costco the other day and my fridge is overflowing with first local organic zucchini. If a cup of cheese helps us eat 7 cups of vegetables, so be it, correct?! This sauteed cauliflower and zucchini recipe comes together in minutes, takes 15 minutes to make, requires ingredients you more likely already have on hand, and keeps kitchen relatively cool. It is similar to a…

Oatmeal Pizza Crust

I am here not to tell you that you should drop your family’s favourite pizza recipe, stop making pizza or that pizza is bad for you. No, none of that is true. What I am here to offer you is an easy flourless oatmeal pizza crust solution, if you are not “a flour girl” (oops, that sounds weird but I like it) like me and are looking for a simple yet lighter Friday night pizza solution. What I mostly love about a rolled oats pizza crust is an absence…

Lentil Casserole with Mushrooms

It is still much of a lentil casserole season in Vancouver despite almost mid-April. It rains, the air is warm and cherry blossoms are almost here, but it’s not quite a spring we are used to in PNW. I do not mind cloudy skies because it means comfort food cooking without sweating in the kitchen, and probably because we just got back from such a long time in the sun. I didn’t get tired from the sunshine but heat is very exhausting, makes you wanna do nothing, and I’m…

One Pot Chili Mac with Beer

In a true Thug Kitchen’s style, I should say holy f*** about this one pot chili mac with beer I made from their new cookbook Thug Kitchen 101 (reminds me of my pasta with cauliflower in terms of layering flavours with plant-based ingredients). It is seriously, THE shit, in my own words (just like this healthy pasta). Chili meets macaroni and cheese, meets soup. The spices were spot on. Perfect winter comfort food like for right now when it is snowing AGAIN. I’m writing this post and soft snow is…
