Baked Salmon with Cheese Recipe

Baked salmon with cheese is a common dish in Russian households. Salmon fillet is baked with white wine, mayo and cheese. For years, I wanted to recreate this salmon a healthier way. I skipped mayo because I thought cheese was a splurge enough. Also cheese is fatty, salmon is oily, end result should come out quite moist. And it did! Instead of wine, I squeezed lemon juice on salmon, then rubbed with freshly grated garlic and sprinkled with salt and pepper. Topped with cheese.

Cheeseburger Quinoa Casserole

While the name suggests a completely unhealthy meal, this cheeseburger quinoa casserole is quite the opposite. Have you seen that WHO confirmed processed and red meat cause cancer?! That is not news to me but quite reassuring and a good reminder. Now to make it clear moderation and occasional consumption are OK but on a regular basis – that is where it gets risky. Overall, overconsumption of any animal products is not healthy – The China Study is an easy read about connection between meat and cancer.

Chicken Zucchini Casserole Enchiladas Style

After I made zucchini lasagna and everyone loved it, I was super eager to make another casserole using zucchini in place of  heavier layer like tortillas or pasta. However zucchini + corn tortillas make delicious crustless zucchini pie. Gigantic garden zucchini would be perfect for that. I was always amazed at a difference between store-bought perfect shape zucchini and garden giants. You could even use sliced rounds if your zucchini is huge, like I did in baked zucchini Parmesan.
