Healthy Tuna Melt Recipe

If you are stressing about serving made from scratch elaborate dinners to your family every night, please stop! In the last year, I have burnt out many times mainly due to non-stop cooking of 3 meals every day. No sandwiches for lunch, no pizza pockets for dinner or chocolate milk for a snack. All from scratch and better be higher in protein because if not, I will get fat. Yeah, and work out 5 days a week and run a full-time business while raising 2 kids.

Spinach Artichoke Quinoa Casserole

I love quinoa casserole because it is quick. If you are trying to eat less meat, this recipe along with black bean quinoa casserole is for you. This spinach artichoke casserole is hearty, filling and full of flavours. I used an entire box of pre-washed baby spinach – my favourite, I truly love the convenience of washed organic greens. Spinach shrinks a lot, so don’t be scared by the amount this recipe calls for. I have a hard time finding frozen or marinated in water artichoke hearts. They are always packed in oil…

Alphagetti

If your kids like all this canned pasta in tomato sauce “nonsense”, they will love this homemade alphagetti recipe. I never bought a single can of Heinz Alphagetti but I bought organic Trader Joe’s O’s, and my kids love it! Not sure why and I’m not even sure is it a soup or a pasta dish?! I have no idea. The whole idea of my lunch or dinner coming from a can sounds unappealing to me. I remember first seeing Alphagetti in kids’ lunch bags and thinking that I would…

Skillet Cauliflower Gratin

I just returned from a food bloggers conference and firmly decided to eat more vegetables after speaking with an amazing holistic nutritionist. According to Marisa, only 15% of our daily protein intake should come from animal sources. Yikes… Frankly, I suspected that because for many past months I have been exercising a lot and eating very high protein diet without drastic changes in my physique. So, lesson learnt. Of course, the menu always comes down to picky little eaters. My kids are very good at eating fresh juicy garden…

Sweet Potato Pizza Crust

Sweet potato pizza crust made with whole foods, full of good for you carbs and requires no food processor. No flour mess either and you can actually cut it like real pizza and hold the slice. Your fingers even will be greasy but with heart healthy olive oil. I don’t know if you think this recipe is weird or cool, but I think this pizza turned out awesome despite my (maybe yours) scepticism!!! I know Friday is considered a pizza night in most North American households. It never happens in…

Roasted Cauliflower Mac and Cheese

Where do I begin?! Let me just say this: I’m not a huge traditional mac and cheese person but I love spaghetti squash mac and cheese and my zucchini mac and cheese. Now, here is a mind blowing combination: pasta, roasted cauliflower and garlic, and cheese => baked and I died. This roasted cauliflower mac and cheese is such an awesome hybrid of two dishes, delicious and contains half of large cauliflower head in here. My kids had seconds, licked the plates and after my toddler told me “I like you”. When…

Cilantro Lime Cauliflower with Avocado

I used to hate cauliflower. Then I saw how many of you guys like it. I made Roasted Garlic & Parmesan Cauliflower and then my cauliflower world was totally rocked by this Cauliflower Crust Pizza Recipe. Cauliflower is white, mild in taste and low in calories. Hello, what not to like?! Wohoo, let’s abuse cauliflower for the next 50 recipes. It’s dirt cheap, which is quite important as I’m spending hundreds of $$$ on organic chicken breasts on my quest to see the abs.

Parmesan Zucchini Sticks

It’s zucchini season…in Mexico. You are probably sick and tired of cardboard tomatoes and imported green beans?! Me too. But it is what it is. Gotta eat our veggies and I love zucchini => 30+ healthy zucchini recipes explains it well. During my last grocery trip I noticed zucchini at a whopping $0.90 per lb, hauled a few pounds home and off on Pinterest I went. Sometimes I run out of recipe ideas just like anyone else. This particular recipe from Nutrition Ella caught my attention. Easy, low…

Healthy 7 Layer Dip

Life is crazy and we try to unwind on weekends. With good food, good friends and with a glass of good wine. If hockey is on, Alex is all in. That means little boys are glued to TV too. I really have no choice but to like hockey. Hey, we are Canadians. We love hockey! Past weekend we did just that and part of the menu was this Healthy 7 Layer Dip Recipe. It was nice to bring a variety to the table with something fresh and vegetarian…
