Sweet Potato Pizza Crust

Sweet potato pizza crust made with whole foods, full of good for you carbs and requires no food processor. No flour mess either and you can actually cut it like real pizza and hold the slice. Your fingers even will be greasy but with heart healthy olive oil. I don’t know if you think this recipe is weird or cool, but I think this pizza turned out awesome despite my (maybe yours) scepticism!!! I know Friday is considered a pizza night in most North American households. It never happens in…

Spaghetti Squash Casserole

Spaghetti squash mixed with organic cream of mushroom soup, tomato sauce, cheese and tender turkey pieces, then topped with crunchy Panko breadcrumb topping and baked until bubbly and golden. This spaghetti squash casserole was SO delicious, comforting and at same time guilt free. After trying spaghetti squash quiche with kale and mushrooms, I have experimented with  a few casseroles using spaghetti squash instead of traditional pasta (see vegetarian baked spaghetti squash casserole).

Roasted Cauliflower Mac and Cheese

Where do I begin?! Let me just say this: I’m not a huge traditional mac and cheese person but I love spaghetti squash mac and cheese and my zucchini mac and cheese. Now, here is a mind blowing combination: pasta, roasted cauliflower and garlic, and cheese => baked and I died. This roasted cauliflower mac and cheese is such an awesome hybrid of two dishes, delicious and contains half of large cauliflower head in here. My kids had seconds, licked the plates and after my toddler told me “I like you”. When…

Kale Turkey Pasta Bake

Whole grain pasta, fresh kale (or spinach), extra lean ground turkey topped with a reasonable amount of part skim mozzarella cheese and baked until golden. This turkey pasta bake is perfect for a fairly quick weeknight meal, leftovers the next day and a meal prep. You could even assemble the casserole and freeze with plastic wrap on top. When ready to eat, bake from frozen and increase baking time by 15 – 20 minutes. I remember when I was pregnant and almost due, I stocked up my freezer with…

Eggplant Pizza

Quick & low carb recipe for America’s favourite comfort food. Indulge without the guilt! These mini eggplant pizza take 20 minutes, from start to finish, and absolutely curb the pizza craving without guilt. They turned out way better than I expected! The eggplant taste wasn’t that prominent (cheese helps), the “crust” was chewy and nutritional info was eye pleasing. Seriously, you have to make these for your pizza night! I made a batch of these eggplant pizza last Friday, along with some kale chips (coming soon), and me and Alex…

Cauliflower Breadsticks

Phenomenal low carb alternative to traditional cheesy breadsticks. These cauliflower breadsticks are full of flavour, cheesy and easy. Yes, this recipe is foolproof, just like my so popular cauliflower pizza crust recipe (the amount of re-pins is insane => thank you!).  However for this recipe, I ditched the cheesecloth and made a few tricks with the ingredients. And you can pick them up by hand, I know you you are wondering about that. The answer is YES. Another easy pizza alternative I recently posted is oatmeal pizza crust, that is quickly…

Cilantro Lime Cauliflower with Avocado

I used to hate cauliflower. Then I saw how many of you guys like it. I made Roasted Garlic & Parmesan Cauliflower and then my cauliflower world was totally rocked by this Cauliflower Crust Pizza Recipe. Cauliflower is white, mild in taste and low in calories. Hello, what not to like?! Wohoo, let’s abuse cauliflower for the next 50 recipes. It’s dirt cheap, which is quite important as I’m spending hundreds of $$$ on organic chicken breasts on my quest to see the abs.

Spaghetti Squash Boats Tex Mex

Oh-ehm-dzhee, guys. These spaghetti squash boats is one of the best dinners I made in a while (at least since my dinner eBook came out I haven’t posted many dinners)! The texture, the flavour, the smell and the calories…all to die for! What a great light dinner, and it wasn’t hard. I don’t do hard, I’m “lazy”. I had these 2 spaghetti squash laying in my fridge and no plan. I have made spaghetti squash casserole before and wanted to try the boats. Since this recipe came out, I…

Parmesan Zucchini Sticks

It’s zucchini season…in Mexico. You are probably sick and tired of cardboard tomatoes and imported green beans?! Me too. But it is what it is. Gotta eat our veggies. During my last grocery trip I noticed zucchini at a whopping $0.90 per lb, hauled a few pounds home and off on Pinterest I went. Sometimes I run out of recipe ideas just like anyone else. This particular recipe from Nutrition Ella caught my attention. Easy, low in calories and who doesn’t like golden Parmesan cheese crust?! Parmesan zucchini…

These Mexican potato skins are perfect for the game days, whatever games you play and watch.:) You can serve them right on a baking tray. Just sprinkle with some fresh cilantro, throw in a few slices of lime and jalapenos, add a jar of salsa, even Greek yogurt (I was obviously out) => you are good to go. I don’t think Mexicans eat much potatoes but…
