Chopped Edamame Caprese Salad. What is that?! All ingredients of a Caprese Salad are chopped and mixed with edamame beans for extra protein and just because I love them. Oh, and Persian cucumbers. Those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado. This superfood is full of healthy fats, so don’t worry.

I have never been a squash fan. Squash. Whaaaaat?! I just, honestly, didn’t know what to do with it and let’s be honest – do your kids like squash? I don’t cook separate meals, so I try to split the suffering between us and the kids 50/50. Yesterday, it was Adam’s turn to whine and nobody else’s. But that little bugger…love him to death, my precious child…wouldn’t eat neither chicken chili con queso nor cabbage rolls casserole. I got away with pear & chia whole wheat pancakes though….

Can’t believe it’s August 1 already?! On a good note, it means zucchinis are in full bloom and are available super cheap at your local market. A couple of nights ago, on the drive back from Pitt Lake, we stopped at a local fruit & veggie stand and I grabbed 5 lbs of these imperfectly perfect zucchinis. $1 per 1 lb. Love local non-GMO food! To me, an obvious healthy food enthusiast, there is nothing better than making a healthy dinner with fresh vegetables and herbs on a summer day. And this quinoa casserole is perfect for that. The flavours scream summer to me: black beans, corn, bell peppers, cilantro, scallions and coconut milk. A hybrid of modern Mexican and Thai cuisines. Makes a perfect easy, healthy, vegetarian and gluten free dinner!
I have been craving some cheesy and hot spinach dip for a while now…Over 5 years I would say. Generally, any spinach dip recipe calls for a lot of mayo and/or cream cheese. So I have been avoiding it and honestly was super scared to make it. See, I’m not an appetizer girl because growing up we never served them and if we did, they were all made with mayo, cheese & fatty canned meats. I have very little experience baking appetizers…
Crunchy fresh green beans made with roasted garlic and coated in melted parmesan cheese. These are perfect any time of the year and especially for the BBQ season. Vegetarian and gluten free. It’s spring in Vancouver and these beans scream spring and healthy to me. I love french green beans from Costco. They are thin and already trimmed. But any kind of green beans will work.
This was supposed to be cheesy and bubbly. And quick, easy & low fat vegetarian recipe. And that’s exactly how it turned out. French style green beans and cauliflower covered in cheese sauce made with garlic and paprika. Healthy vegetarian recipe that kids will love. Moms will love it too: 199 calories & 5 Weight Watchers points+! Very cheesy… And bubbly…
