Chopped caprese salad with all ingredients of a caprese salad combined with edamame beans for extra protein and just because I love them. Oh, and persian cucumbers, those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado, like avocado fruit salad and avocado lettuce salad. This superfood is full of healthy fats, so don’t worry.
I have never been a squash fan. Squash. Whaaaaat?! I just, honestly, didn’t know what to do with it and let’s be honest – do your kids like squash? Can’t believe it’s August 1 already?! On a good note, it means zucchinis are in full bloom and are available super cheap at your local market. A couple of nights ago we stopped at a local fruit & veggie stand and I grabbed 5 lbs of these imperfectly perfect zucchinis. $1 per 1 lb. Love local non-GMO food! I have been craving some cheesy and hot healthy spinach dip for a while now…Over 5 years I would say. Generally, any spinach dip recipe calls for a lot of mayo and/or cream cheese. So I have been avoiding it and honestly was super scared to make it. See, I’m not an appetizer girl because growing up we never served them, however nowadays I appreciate a healthy serving of baked spinach feta dip, eggplant feta dip or spinach and feta dip with shrimp accompanied by a glass of wine.
Pan fried green beans made with roasted garlic and coated in melted parmesan cheese. These are perfect any time of the year and especially for the BBQ season.
