Baked Oatmeal Breakfast Bars with Carrots

My right thumb’s knuckle can’t heal properly because I keep grating carrots day after day, baking oatmeal breakfast bars and scooping carrot cake truffles (coming on Friday). As I grow up, the more I follow my heart – doing what makes me happy. And right now happy means a lot of carrots baked with a million of superfoods, topped with creamy Greek yogurt “frosting” and eaten for breakfast. Skies know, I suck at cooking breakfast more than oatmeal, so it better be ready for me in the morning….

Cinnamon Toast Crunch Recipe with Superfoods

After last weekend, I am convinced – the more you relax, the more tired you feel. In 2 full days the only useful thing I managed to do was to test this cinnamon toast crunch recipe. Again, out of pure selfishness because I am bored to death with all breakfast options in my house. We got this window of opportunity when kids do not have sports for 2 weekends and both, me and Alex, looked at each other and pretty much thought the same: “Screw storage space cleaning,…

Mint Green Smoothie Bowl

Greens for breakfast anyone?! And without eggs. Rather spinach, kale and full of whole grains organic Nature’s Path Love Crunch Granola Aloha blend, which is not only delicious but also socially and environmentally responsible (see below). Not savoury, not overly sweet, just the right amount of everything good for us and tasty. Because no matter how healthy meal is, if it is not tasty who wants to eat it, right?! I have been craving all things beachy, minty and pineapple-y lately. That is February for you with dreamy…

Chocolate Banana Chia Pudding

I posted this banana chia pudding a few years back but pictures and recipe itself could have been better. A radio host said “January is like Monday of the year” while we were returning from a day of skiing a few days ago. So true, because I keep making and craving chia pudding. You definitely won’t find me doing it on a weekend. On a weekend I recover from a crazy week in the kitchen and we survive on Alex’s cooking and organic quick prep Costco finds (frozen pre-cut…

6 Ways to Eat Super Seeds

This summer we have been extremely active, busy and seem to be on the go every weekend and even mid week. It has been an extremely hot summer and without AC in the house we have been escaping the heat either at the lake, ocean, park or on a shady hike. We finally reached the stage of life with no diapers and strollers where we can do more fun things as a family.

Lemon Blueberry Overnight Smoothie Jars

One day I got tired of Overnight Oats and Chia Pudding, and thought “What if I combine both and soak them in a flavoured smoothie?!”. I came from an evening walk and whipped these up in 5 minutes. Honestly, these breakfast jars were amazing! Even my kids ate them for a snack no problem and it is not easy to feed them chia pudding. Really depends on a flavour and consistency.

Clean Eating Chia Jam Recipe

Am I the only one making jam in winter?! I tried making chia seed jam first time ever last December when I couldn’t pass by $2 bags of organic cranberries. And you don’t have to chop them like the photo suggests below (these cranberries were for Cranberry Cheesecake Bars), neither you have to cook the jam. Instead, you just process your choice of berries or fruit in a food processor or blender with some honey (maple syrup), lemon zest and vanilla extract. It keeps well for weeks and…

Overnight Superfoods Oat Parfait

Although I do not commute to work, I love waking up to already made breakfast. No, Alex doesn’t cook me breakfasts, they cook themselves in the fridge or in the oven the night before. My cooking inspiration is just not there until about 10 AM. And when eating clean, preparation is key for breakfast and snacks. I have already tried chia pudding and overnight oats. I have also tested awesome overnight breakfast quinoa which I will share soon. This week we are eating these overnight parfaits made with…

Banana Oat Bars

These banana oat bars is another favourite quick breakfast of mine. I have quite a collection by now, which you can check out under Breakfast category. These bars are also very similar to Banana Protein Oatmeal Cups but without protein powder. I love having oats for breakfast because they are not wheat (everything in moderation) and cook quickly. I usually would pour boiling water over quick oats for a few minutes, then top with yogurt and fruits. These banana oatmeal bars are a baked alternative to traditional oatmeal. Naturally sweetened with…

Healthy Chocolate Mousse Recipe

Here is an easy and healthy single serve dessert idea for you – chocolate mousse made with chia seeds, dates and cacao powder. Instead of consuming a bunch of saturated fat and processed sugar that comes with a traditional mousse, you will be “inhaling” antioxidants, fiber, healthy fats and naturally occurring sugars. And it is so delicious, even Italians will love it! This chocolate mousse takes 5 minutes to make and requires just a bit of planning ahead. All you have to do is to soak chia seeds for…
