Three Dinners from One Whole Chicken

There are so many benefits to buying whole chicken vs. chicken breasts, thighs and other parts. And don’t worry, butchering the chicken yourself is easy peasy, just watch the video. First and foremost – price. At Costco, organic whole chicken costs $2.49/lb vs. chicken breasts at $5.99/lb – that’s twice the savings. Secondly, all those bones that make flavourful chicken broth. Thirdly, you can stretch whole chicken for 3 – 5 meals. You can make twice more chicken broth than I did by simply using a bigger pot…

Thai Chicken Salad Recipe

Hola! I’m back from Mexico City and will share my trip as soon as we return from San Juan Islands, WA, the trip I will have to share too (can you tell that I think “life is short”?!). Like after any vacation, I was craving my homemade food, and now with both of us working from home I am very intentional about meal prepping. Yes, I did meal prep (which is on the list to share too) and this Thai chicken salad recipe was a huge part of…

Healthy Carrot Soup with Chicken

Healthy carrot soup made with carrots from Alberta. And potatoes too. Then paprika and coriander sauteed with onion and garlic. Everything cooked in homemade chicken stock with tender organic chicken. Yes, you can use store bought to save on time but not money. Depends on a day. I get it. My garage’s floor is covered with bags and boxes lined with newspaper full of mom’s earthy produce. Not exaggerating at all, she brought about 20 lbs of tomatoes, 15 lbs of beets, 30 lbs of potatoes and about 10 lbs…

Crockpot Butter Chicken

Healthy crockpot butter chicken, an ultimate comfort food made lighter, healthier and in a slow cooker for added convenience. And despite the name, this dish contains not a teaspoon of butter, not there is anything wrong with a bit of butter in your diet. I’m not a huge fan of Indian food but I love butter chicken! And this healthy version of it delivered – creamy, rich and a tad sweet. Just like the original but so much healthier. You can taste a hint of ginger and the…

Slow Cooker Turkey Meatloaf

What I like about this slow cooker turkey meatloaf is that it’s lower on meat but rather is “beefed up” with red lentils, and contains zero breadcrumbs that are successfully replaced by oats. I love substituting some of the meat with lentils or beans in traditional recipes (on my to do list is half lentils bolognese sauce) because they help cut back on meat for health and budget reasons.

Slow Cooker Butternut Squash Soup

It is cold and crisp in PNW. Perfect for some velvety smooth, hearty and healthy slow cooker butternut squash soup. This weather made a soup making machine out of me. Remember I mentioned making slow cooker butternut squash soup before sausage barley soup?! The one that sent us all to bed hungry. So I remade it, loaded with more food and it couldn’t have been more delicious!

Healthy Chicken Wild Rice Soup

I think I’m about 17 years behind with this healthy chicken wild rice soup. Since day one, as a brand new North American, creamy soup on any fast food joint’s menu made my heart stop – it looks SO good! Fast forward to 2017, and I’m proud to be making creamy healthy chicken wild rice soup without a cup of butter, heavy cream or white flour but still so creamy. And it literally won’t make our hearts stop.

Spaghetti Squash Chow Mein

I baked 8 lbs of spaghetti squash, used some for making extremely (!!!) delicious chow mein, and the rest is tucked in the fridge for a week. Well, the rest is only 2 lbs, which makes this spaghetti squash chow mein loaded with 6 lbs of squash, in addition to cabbage and carrots. I whisked my own imitation of healthy homemade oyster sauce, and kids were squeaking like a bunch of piglets with excitement, that’s while chomping on lbs and lbs of spaghetti squash. If you are brave…

And although I haven’t tested every single recipe, I found at least one comment…

Grandma’s Slow Cooker Chicken Noodle Soup

I consider myself a chicken noodle soup expert because I grew up on it and observed my grandma’s tricks for over a decade. I do know my chicken noodle soup business and I will share it with you, because America needs to know that chicken noodle soup is SUPER easy to make at home, and it has nothing in common with bright yellow packaged or canned stuff that has no chicken in it. There is nothing neon yellow about real chicken soup! The key to good chicken noodle…
