Healthy Ramen Noodle Salad with Chicken

It has been a very rainy and cold spring so far, which I’m OK with. I might be biased after spending a month in the sunshine but I do like rain. It makes our PNW’s nature lush, streets clean and air fresh. Rain means I can spend endless hours of cooking (and cleaning up) without worrying about standing in a hot kitchen for hours. In the evening, there is nothing better than curling up with a real book in bed (not the case right now with our brand new…

Easy Miso Soup with Meatballs

I’m not the one to make sushi at home. I’m quite creative and frugal when it comes to food, but sushi – we go out for, especially in Vancouver, the best American made sushi I ever had are here. Miso soup, I want to talk to you about making an easy miso soup with meatballs. It is so damn ridiculously simple recipe and has about 10 shades of flavour. And to make it clear – we are talking about the miso soup without dashi or fish sauce, and…

Slow Cooker Whole Chicken and Pasta

I always buy whole chicken, organic at Costco or from my local farmer, because it is much cheaper than buying chicken parts. All my boys LOVE chicken noodle soup and last time Alex went to Costco, he got a 2 pack of organic whole chickens. I had one left in a freezer and decided to try making slow cooker whole chicken with rosemary, lemon, garlic and pasta. All magic happens right in a slow cooker. Hear me out how. No, I didn’t cook pasta for 8 hours in a crockpot. No…

Sheet Pan Chicken and Potatoes with Roasted Garlic

I can’t declare that this sheet pan chicken and vegetables is the most exciting dish I ever produced, but that is exactly why I turned to a one pan dinner in the first place – I wasn’t very excited about cooking supper. The thing is that it works, in so many ways. So, I thought I would share although the process of roasting chicken, potatoes and broccoli might be the “I’ve been doing this forever” obvious to you, but I won’t know it until I share.

Peanut Sauce Chicken

Yesterday, I went to a local farm market store to get chicken thighs to make peanut sauce chicken, I teased you with a few weeks back, and came out with so much more (as always). In my bags was: cream top grass-fed yogurt I couldn’t absolutely resist because it was 1.5kg, with 3.5% fat, plain yogurt without added sugar; local bakery’s whole wheat buns, bread and regular pretzel sticks; pirogies (my emergency meal for the weekend) and 10 slices of bacon! Oh, and I didn’t use my reusable…

Mexican Turkey Meatballs

While the great America is pulling on their stretchy pants, here in Canada we are long past that stage. It is Christmas craziness which I can’t seem to get a hang of just yet. All I keep hearing is Cabo’s waves and dreaming of long walks on the never ending beach. Smashing avocados, chopping cilantro and squeezing lime for the Mexican turkey meatballs dinner last night did not help the situation. I just can’t seem to get excited about making letters to Santa look untouched, spending hundreds of $s on Amazon…

Butter Chicken Spaghetti Squash Boats

Who am I to talk about traditional Indian dishes but oh, I will go there. Prepare to be amazed. If my Ukrainian grandma could make a chicken curry with sour cream, onions and curry powder back in the 90s, why can’t I make some butter chicken and spaghetti squash pretending squash is pasta?! Haha, let’s be clear spaghetti squash doesn’t replace spaghetti but tastes very good. By the way, grandma’s curry was DELISH! Not original but a tasty healthy meal really has no rules to it. Too many…

Slow Cooker Stuffed Pepper Casserole

I didn’t think stuffed pepper casserole cooked in a slow cooker for hours could be possible. I just didn’t know what would happen to the brown rice. But I got so many questions on my lazy man cabbage rolls recipe from readers asking if it can be cooked in a slow cooker that I had to try. I will attempt the lazy cabbage rolls in a slow cooker one day but for now I was craving unstuffed bell peppers casserole. In a sense, both dishes are similar – meat,…

Creamy Carrot Soup Without Cream

Healthy cream of carrot soup made with carrots from Alberta. And potatoes too. Then paprika and coriander fried, of course, with onion and garlic. Everything cooked in homemade chicken stock with tender organic chicken. Yes, you can use store bought to save on time but not money. Depends on a day. I get it. My garage’s floor is covered with bags and boxes lined with newspaper full of mom’s earthy produce. Not exaggerating at all, she brought about 20 lbs of tomatoes, 15 lbs of beets, 30 lbs of potatoes…
