A clean eating version of chicken strips that are baked instead of fried, and coated in ground almonds in place of breadcrumbs. Brown Rice and Chicken Stuffed Peppers

Chicken stuffed peppers are wonderful because bell peppers are easy vegetables to be stuffed (unlike cabbage leaves, hence Lazy Man Cabbage Rolls) and anything goes as for the stuffing. Therefore, the detailed name because I am planning on posting many other stuffing variations. Bell peppers are on a Dirty Dozen list so I’m taking an advantage of Fall farmer’s market while I can still get bell peppers grown without pesticides and herbicides. Organic bell peppers are pricey and we usually use them for snacks in winter.

Clean Eating Chicken with Artichokes

I made this Chicken with Artichokes last week before we headed to Whistler and my kids said: “Mom, this tastes like a Thanksgiving dinner!”. Probably because I served it with Turkey Bacon and Cream Cheese Mashed Potatoes with all the artichoke gravy flowing and mixing with potatoes. We had it at the lake and all my boys loved it. There were plenty leftovers as well.

These buffalo chicken tacos were a hit and almost guilt free because I made my own blue cheese sauce by simply combining 4% plain yogurt with crumbled blue cheese, a bit of salt and freshly ground pepper. Saucy Green Beans and Chicken

This green beans and chicken is 4 ingredient dinner, embarrassingly easy and as the name suggests very saucy. Who doesn’t like sauce?! My tomato sauce happens to be healthy and low calorie though. I wouldn’t call it a quick recipe but all work is really done by the stove and not you. Tomato paste really adds more depth to the tomato sauce. Plus this is a mess free recipe which I should develop more of. I spend hours cleaning my kitchen every single day.
