Chicken Zucchini Noodles with Pesto

So, I finally gave in and got a spiralizer before Christmas. We do gifts for ourselves. Next on the list is a trip to Lululemon. I haven’t bought a piece of clothing for myself since August. After months and months of debating whether I need another kitchen gadget and liking all hand spiralizers so-so, I saw a countertop spiralizer at my grocery store for $25. That, my American friends, is a BIG DEAL because in Canada everything is so much more expensive and harder to find than in the US.

I got home from an evening workout and Alex jumped in a garage screaming “Crazy chicken!”. Slow Cooker Quinoa, Chicken and Butternut Squash Soup

It is cold and crisp in PNW. -4 C in the morning is borderline state of emergency on the West Coast. I have a good laugh watching neighbours covering their cars with blankets after living in Alberta for 8 years. There, you turn heater on in the morning and AC in the afternoon in summer. Only in Alberta. In winter, plug your car below -25 C and other times just make sure to always have that scraper thing.

Cheeseburger Quinoa Casserole

While the name suggests a completely unhealthy meal, this cheeseburger quinoa casserole is quite the opposite. Have you seen that WHO confirmed processed and red meat cause cancer?! That is not news to me but quite reassuring and a good reminder. Now to make it clear moderation and occasional consumption are OK but on a regular basis – that is where it gets risky. Overall, overconsumption of any animal products is not healthy – The China Study is an easy read about connection between meat and cancer.

One Pot Quinoa, Chicken and Broccoli

In Ukraine we have this dish, “plov”, made with chicken or lamb, rice and lots of spices. Basically a loaded pilaf. My dad made a wicked one with probably 1/2 cup of good quality olive oil and various parts of chicken. Almond Crusted Chicken

A clean eating version of chicken strips that are baked instead of fried, and coated in ground almonds in place of breadcrumbs. An old almond crusted chicken recipe of mine that was desperately screaming for a picture makeover. Brown Rice and Chicken Stuffed Peppers

Chicken stuffed peppers are wonderful because bell peppers are easy vegetables to be stuffed (unlike cabbage leaves, hence Lazy Man Cabbage Rolls) and anything goes as for the stuffing. Therefore, the detailed name because I am planning on posting many other stuffing variations. Bell peppers are on a Dirty Dozen list so I’m taking an advantage of Fall farmer’s market while I can still get bell peppers grown without pesticides and herbicides. Organic bell peppers are pricey and we usually use them for snacks in winter.
