Spicy Chicken Meatballs with Zucchini

Spicy chicken meatballs recipe made healthy with zucchini in place of breadcrumbs and simmered in scrumptious balsamic harissa sauce. Ready in under 40 minutes and are mild enough for the kids. Serve as a main dish with brown rice, quinoa, salad or as an appetizer. Healthy comfort food at its best. These were soooo good! I love meatballs, especially chicken!!! I could never be vegan but I’m doing my best to eat plant based as much as I can. These chicken meatballs were so juicy and tender. Traditionally harissa sauce…

Oven Fried Coconut Chicken Tenders

These chicken tenders are juicy, greasy and crispy. Like a junk food should taste, only 100% healthy and organic (in my case). Coconut flakes created this amazing crunchy crust that my kids couldn’t resist. For extra coconut-tiness I also rubbed the baking sheet with coconut oil. And what Ukrainian skips garlic?! Yes, I marinated chicken in garlic, salt and pepper for 15 minutes and it was amazing!!!

30 Minute Chicken and Cauliflower Curry

With a perfect balance of lean protein and vegetables, this chicken and cauliflower curry recipe can be made all vegan using extra cauliflower and served over brown rice or quinoa. Mild enough for the little ones. Large skillet for leftovers (I love them). Make it with light coconut milk if you are calorie conscious or go full fat for a creamier version (next time I’m doing that). No matter what you decide to do, this dinner is speedy and healthy! Yesterday we went out for lunch with friends…

Easiest Slow Cooker Chicken and Spaghetti

This slow cooker chicken spaghetti was mind blowingly easy and delicious. 150th thousand time I got convinced that simple food is the best food ever! I slap my own hands quite often when I start adding a little bit of this and that. God forbid to brown butter… No need to make your life harder, America! When I first came to Canada, I was thinking “wow, fancy food they eat here” while flipping glossy cooking magazines. And never made a single recipe. Why? Because the ingredients list was so…

One Pan Quinoa Chicken Chili

My kids love Mexican food and this quinoa chicken chili recipe is one of the ways I can get quinoa into them. Personally, I love quinoa more than pasta, but I understand not everyone is a weirdo like me. This dish is also great for all chili lovers as it is ready in under 45 minutes. If you plan ahead, you can also make The Biggest Loser Crock Pot Turkey Chili or another very popular recipe of mine Crock Pot Buffalo Chicken Chili (surprisingly my kids don’t find it…

Greek Yogurt Chicken Alfredo Spaghetti Squash Boats

Spaghetti squash boats with chicken in creamy Alfredo sauce is comfort food made lighter by replacing traditional pasta with tender spaghetti squash and heavy cream with not less creamy but so much healthier Greek yogurt. Without sacrificing the flavour of course – garlic and freshly grated Parmesan cheese add so much flavour to this spaghetti squash boats recipe. I haven’t had Alfredo sauce for years! My blogger friend Alex from Canuck Cuisine once mentioned to add a cornstarch to Greek yogurt to prevent it from curdling. We were…

Slow Cooker Teriyaki Chicken Drumsticks

This Slow Cooker Teriyaki Chicken Drumsticks means juicy dark meat simmered in Teriyaki sauce from scratch, topped with green onions and sesame seeds, and served with long grain brown rice. Asian food is one of my favourite comfort foods. And the best part is it’s quick and healthy. And kids usually love Teriyaki anything. Years ago I used to buy bottled Teriyaki sauce from Costco, full of refined sugar and hard to pronounce ingredients. When I started to eat clean, I ditched it of course. Now I have discovered organic non-GMO…

Chicken Noodle Harvest Vegetable Soup Recipe

Healthy 30 minute comforting chicken noodle vegetable soup with a slow cooker option.  This chicken noodle vegetable soup is easy, budget-friendly and my boys couldn’t get enough of it. It comes together in 30 minutes and is a great way to “clean up” your fridge’s veggie drawers and freezer’s veggie bags. For vegetables, I added carrots, potatoes, cabbage and tomatoes. I just love the addition of fresh garden tomatoes in soup combined with garlic and fresh herbs. Cabbage adds so much volume and flavour to this soup….

Cauliflower, Tomato and Chicken Sausage Quinoa Gratin

When a cashier was nice enough to point out at a $5 price for a head of cauliflower, I was frankly surprised September is not a cauliflower season. Oh well, I went ahead and bought 2 heads anyways and made this delicious gratin. If you ever want to eat something without stressing about the calories, know it’s the vegetables. You will get full before you overeat them.
