Chicken and Garden Veggies Quinoa Skillet

Sautéed chicken with bell peppers, zucchini, broccoli and quinoa. All in one quinoa skillet and takes less than 40 minutes to make. I do love simple dinners and my chicken. My garden is not overflowing with vegetables but my local farm market is.

Grilled Lemon Rosemary Chicken with Green Beans

Grilled chicken breast is one of my favourites. It is lean, tender and juicy, if cooked properly. My mom and grandma always said it’s the driest part of the chicken but I just love it. The marinade and the right cooking method make all the difference though. I think my ladies only ever made a soup with chicken. We had no grills.

Skinny Tortilla-less Chicken and Poblano Enchiladas

Oh so easy, low carb and flavourful Mexican dish! Made with enchilada sauce from scratch and wrapped in firm leafy greens. You won’t miss tortillas at all, I promise! I love enchiladas and who doesn’t?! The problem is calories add up quickly, like with any food. Isn’t that always a problem?!:) So, I tried to come up with lighter enchiladas recipe without sacrificing the flavour and taste. Swiss chard to the rescue! Why haven’t I thought of this before?! If you do not like Swiss chard or…

Crock Pot Mexican Chicken Lettuce Cups with Mango Salsa

Easy and light dinner the whole family will love! Did you guys think I lost my mind by posting a Crock Pot recipe almost in June?!:) Honestly, it’s the best summer kitchen appliance – you plug it in outside. That’s of course if you have outside, haha. Don’t plug it in your condo hallway please. I’m mostly concerned the neighbours eating your dinner. Seriously, how good does this Mexican Chicken look?! And your abs are happy, and the house is cool and you love me. I know, I…

Skinny Chicken, Broccoli and Rice Casserole with Kale

I’m sure many of you know and love a good old chicken broccoli rice casserole which is delicious but not so light. I created a skinny version of America’s favourite comfort food by cutting down cheese, using brown rice, lean chicken breasts, upped the broccoli and added kale. The result was a delicious casserole without extra calories. My boys ate it twice this week and nobody complained. You don’t need canned soup or a pound of cheese to make this chicken broccoli rice casserole saucy and comforting. Adding just…

Thai Chicken Spaghetti Squash Bowl Recipe

Lean chicken, crunchy veggies, toasted cashews, fresh cilantro tossed with lime juice, fish sauce and tamari. I love Thai food but haven’t had it in a while because, let’s say, it isn’t light. Lately, we have been taking boys to the pool on Fridays (and more) and after going out for a dinner. We always end up at a sushi restaurant because it’s easy to eat clean there. Last time, boys wanted Thai. We ended up at the Japanese restaurant again (guess who insisted?!) but I made…

Quinoa Chicken Pot Pie Recipe

Many years ago, while attending university, I used to work part-time at the post office located inside huge drug mart. I never brought dinner to work because there were freezers full of chicken pot pies for $0.99. Why would I bother to cook if there was so much cheap food at work. I’d rather get enough beauty sleep for my next Russian party. Yes, who needs to cook when you are busy partying (and studying)?! Then, after I had kids, I transitioned to a Betty Crocker chicken pot…

Chicken Abruzzi

A few weeks ago, one Saturday afternoon, while shopping in the US (we live near the border and go across often), Kyle asked to have lunch at the Olive Garden. In my mind, I said good-bye to yesterday’s burnt 800 calories and off we went. You can imagine my eyes (we don’t eat out often, especially at Italian restaurants, duh) when I saw a lighter menu. Whaaaat?! Chicken Abruzzi was one of them. The description: Grilled chicken breast in a savoury broth simmered with cannellini beans, kale and garden…

Lime Quinoa and Chicken Soup Recipe

Healthy zesty meal like soup with a kick of heat. And there is plenty leftovers that can be frozen. This soup with quinoa is a Mexican version of North American chicken soup. As soon as I saw Lindsay’s Jalapeño Lime Chicken Soup, I was in love with the flavours. She has many great ideas and is a pro in making comfort Mexican food. My recipe is completely different but incorporates the same flavours – fresh lime, jalapeños, cilantro and is served with multigrain tortilla chips. As I was…
