Healthy Chocolate Bread with Spelt Flour

Since we are leaving on a month long tropical adventure in a few days, I’m trying not to grocery shop and use up everything I have. In a very long list of draft recipes (about 100) I had this chocolate coconut bread I tested a few years back and since have abandoned. I remember it turned out very moist but texture needed work. Kids have busy week of sports, so I needed fuel snacks, desperately. Healthy chocolate bread made with a can of coconut milk to the rescue, yep….

Healthy Pumpkin Brownies

I am such an idiot. The other day while whisking these healthy pumpkin brownies I kept thinking how much I am obsessed with dark chocolate. And how much I love to photograph dark chocolate. So, I took like 50 shots of falling batter, pouring batter and cute little chocolate chips. Just to delete them all the next day. Yeaaaaaaaaaaaah… I also lost a bottle of avocado oil somewhere between Costco and home. Who loses food while driving?! Me! We might find it 6 months later in a trunk somewhere…

Healthy Pumpkin Blondies

Melt in your mouth pumpkin blondies on the menu this week! Fudgy, moist, rich and made without flour or eggs. I’m NOT joining a tribe of cooking weirdness, I promise, but I love to mix things up in my diet to keep it more balanced. Yes, you guessed it right – blondies with chickpeas. Aha. I promise there is 3 out of 150% chickpea taste in them. Test on the pickiest husband/boyfriend, if you have one. Mine will eat anything, even recipe tests I don’t like, Alex loves…

Healthy Chocolate Chip Cookies

For the longest time I have hesitated to post this recipe. Simply because these healthy chocolate chip cookies don’t look nearly as pretty and are not chewy as their sugar loaded counterparts. Then the other day I was browsing Internet for cookies made without sugar and came across Tessa’s (Handle the Heat) The Ultimate Guide to Chocolate Chip Cookies. She showed a version made with whole wheat flour and maple syrup => I got inspired.

Chocolate Chip Protein Cookies

Last night was everything someone who wants abs doesn’t do. We had dinner at 7PM, then I worked on a new recipe post, followed by Diners, Drive-Ins & Dives with everyone around me having snacks, then I went to bed and read a few food blogs. Needless to say, by 11PM I was falling asleep starving. Who does that?! A hint, don’t do that. But nothing happened. I didn’t binge, I didn’t die and fell asleep. Hear that?! A self-talk can do a lot. While I was laying in…

Healthy Double Chocolate Chip Peanut Butter Cookies

Oatmeal cookies are one of my favourites. And I can’t control myself near dark chocolate. I eat peanut butter for breakfast every day. Coconut oil – can’t get enough of it. Alex uses it even for cooking steak. And I recently found these Bob’s Red Mill Quick Cooking Steel Cut Oats. So really, I had all ingredients on hand to put these cookies together for us. And another great thing – no extra bowls to mess, just one! These chocolate cookies are one of my favourite quick cookies…

Mango Granola Bars

Healthy mango granola bars, just in time for back-to-school/work season. Are you ready? I’m sooooooo ready for school, it’s about time. If you have kids, you get it. 8 PM bedtime, 1 child free, homework, soccer games and lunch packing… Oh, well, life goes on and my life is full of Mango Coconut Nut & Seed Bars these days. Made them 3 times in 2 days. Tested on Alex, kids, 3 of my neighbours, Alex’s co-worker, Alex’s train buddy, you name it. All thumbs up. Roasted peanuts (can be…

Quaker Protein Bars

Ever since I posted my first protein bar recipe (peanut butter oatmeal protein bars) I wanted to make another one but higher in protein, lower in sugar and fat. And it’s not easy because nut bars rely on nut butter and sticky sugary liquids like agave and honey to hold them together. I tried to cut down the nut butter and agave to almost nothing and replace with almond milk. I also tried to use chia gel as a glue. Finally, after much testing, I came up with a copycat…
