I would go for one of these chocolate quinoa muffins in a heartbeat right now but they are all gone. We ate some, kids-neighbours ate some and friends-neighbours ate some. Honestly, I do not run with a tray of freshly baked goodies in my hands, towel on a shoulder and tripping on Lego offering muffins to whoever comes in the door.
These chicken tenders are juicy, greasy and crispy. Like a junk food should taste, only 100% healthy and organic (in my case). Coconut flakes created this amazing crunchy crust that my kids couldn’t resist. For extra coconut-tiness I also rubbed the baking sheet with coconut oil. And what Ukrainian skips garlic?! Yes, I marinated chicken in garlic, salt and pepper for 15 minutes and it was amazing!!!
Did you know you can make dark chocolate at home?! All you have to do is combine equal parts of cacao powder, coconut oil and maple syrup on a stovetop and then freeze => coconut oil fudge. That chocolate already is a step above store bought organic dark chocolate, which is a step above Hershey’s and Cadbury. But these superfood chocolate bars sweetened only with dates, full of superfoods like coconut oil, chia seeds, cacao powder and coconut flakes are so 2020.

I will be short and sweet today.:) Literally sweet because I rolled 32 of coconut protein balls today and was totally covered in coconut flakes and sticky dough. But I’m not complaining.
