Carrot Cake Truffles

I am on a huge carrot kick (baked oatmeal breakfast bars), probably because I should be, because it is almost Easter?! Yep, when I got home from Mexico and saw all the carrot craziness on Pinterest, I was like “Not a papaya/watermelon season? Works for me”. So here we are, making the most easy, delicious and healthy carrot cake truffles with shredded carrots, coconut flakes, oats, raising and raw almond butter. What I’m trying to say is – in case you are entertaining this Easter and want to…

Healthy Chocolate Coconut Balls

OMG SCHOOL IS BAAAACK! You have to understand. I have been waiting for 10 years for my kids to be taken care of by someone else besides me and Alex for free at least half a day!!! In PNW we do not start school until after the Labour Day. On top of that, add gradual entry to kindergarten with one day it is a 20 minute interview. Another day is off because another half class is attending. A day after come for a half day. Then oops, it’s…

Chocolate Quinoa Muffins

I would go for one of these chocolate quinoa muffins in a heartbeat right now but they are all gone. We ate some, kids-neighbours ate some and friends-neighbours ate some. Honestly, I do not run with a tray of freshly baked goodies in my hands, towel on a shoulder and tripping on Lego offering muffins to whoever comes in the door.

Coconut Crusted Chicken

This coconut crusted chicken is juicy, greasy and crispy. Like junk food should taste, only 100% healthy and organic (in my case). Coconut flakes created this amazing crunchy crust that my kids couldn’t resist. For extra coconut-tiness I also rubbed the baking sheet with coconut oil. And what Ukrainian skips garlic?! Yes, I marinated chicken in garlic, salt and pepper for 15 minutes and it was amazing!!!

Superfood Chocolate Bars

Did you know you can make dark chocolate at home?! All you have to do is combine equal parts of cacao powder, coconut oil and maple syrup on a stovetop and then freeze => coconut oil fudge. That chocolate already is a step above store bought organic dark chocolate, which is a step above Hershey’s and Cadbury. But these superfood chocolate bars sweetened only with dates, full of superfoods like coconut oil, chia seeds, cacao powder and coconut flakes are so 2020.

Almond Joy Protein Balls Recipe

I have to tell you right away that this protein balls recipe tastes best warm. Just saying because I know many of you do not read the post completely. And I get it, no worries, we are still friends. As soon as I nailed this protein balls recipe and took a first bite, I almost died in heaven! These protein balls came out so soft, fluffy and tender. I didn’t expect that at all because most protein balls are dense. But because I didn’t use dates or any…

Coconut Protein Balls

I will be short and sweet today.:) Literally sweet because I rolled 32 of coconut protein balls today and was totally covered in coconut flakes and sticky dough. But I’m not complaining. It took only 20 minutes from start to finish. These coconut protein balls make great pre or post workout snack. Just like this Slimming Blueberry Protein Shake or Guilt-Free Chocolate Protein Shake. Or healthy-mommy-on-the-run-to-the-playground snack. Or busy-mommy-no-time-for-breakfast snack. Or no-time-to-eat-for-mommy-ever snack. Kidding.
