Healthy Gingerbread Fudge

As much as I do not like to add “Clean Eating” in front of the recipe’s name, this time I have to in order to let you know this gingerbread fudge does not contain condensed milk or loads of sugar. Instead, my healthy gingerbread fudge is loaded with healthy fats and is naturally sweetened. The sacrifice is you have to keep it frozen and serve right before enjoyment. So, put on your cutest apron, quickly zoom between the guests and stack it back in the freezer. 

Slow Cooker Quinoa, Chicken and Butternut Squash Soup

It is cold and crisp in PNW. -4 C in the morning is borderline state of emergency on the West Coast. I have a good laugh watching neighbours covering their cars with blankets after living in Alberta for 8 years. There, you turn heater on in the morning and AC in the afternoon in summer. Only in Alberta. In winter, plug your car below -25 C and other times just make sure to always have that scraper thing.

Thai Cauliflower Rice

This Thai cauliflower rice after past weekend that has been an absolute nightmare – we spent 46 hours without power due to a windstorm. See, there is always a payback for a super fun weekend before.
