Healthy Almond Cake

Honestly, there is a reason I don’t bake. If I start experimenting with baking I just know that I will be eating non-stop. Eating is a part of my job. Like with this flourless almond cake recipe – I swear me and Alex ate most of it when I first made it for Easter. Yes, it is a healthy almond cake but it is still sugar and a cake. I ain’t gonna fool myself. I can’t stop with desserts so I trained myself better not to start at all. Plus…

Vegan Asparagus Soup

I specifically named this recipe Vegan Asparagus Soup because there aren’t many. Because iFOODreal is not a vegan blog. Because dairy products seem to get into our meals daily. Because eating less animal products is good for us. I find dairy and meat are readily available for a grab option where as vegetables need labour in order to become a satisfying meal. Because I live a real family life with 2 children being vegan is not an option and I am not convinced it is necessary. Therefore, I do…

Mixed Berry Ice Cream Recipe

Dairy free ice cream made with coconut milk and your choice of berries, fresh or frozen. Because it is March I used frozen organic cherries from Costco and local blueberries. It is a no churn ice cream recipe so no ice cream machine required. I have been experimenting with coconut milk ice cream all year round but not all attempts have been successful thus I haven’t shared. Ice cream is also a bit off season in March but it is one of my favourite treats which I can…

Slow Cooker Chicken Lentil Soup

You know how some recipes have stories?! My story behind this to-die-for Tex Mex flavoured slow cooker chicken lentil soup with corn unfolded as following. Friday is my day off. Well, I mean a day off from being a blogger. Moms are really never off, let’s be real. Friday is the day when I do chores piled up over a week. So, this Friday a chore was painting doors and trims. I’m slowly refreshing all of them throughout the house. Yes, I love painting and handyman work. Alex jokes…

Healthy Gingerbread Fudge

This healthy gingerbread fudge does not contain condensed milk or loads of sugar but rather healthy fats and naturally occurring sugars. The sacrifice is you have to keep it frozen and serve right before enjoyment. So, put on your cutest apron, quickly zoom between the guests and stack it back in the freezer.

No Bake Chocolate Peanut Butter Bars

If you need a quick party dessert, these no bake chocolate peanut butter bars are for you! Made with Nature’s Path premium organic dark chocolate & peanut butter granola, homemade chocolate and coconut cream. That is only 5 ingredients! And if you use melted store bought organic dark chocolate that would be 3 ingredients! I’m seriously minimalistic these Holidays. This recipe is a submission for a #FestiveFoodie contest which you can read all about below.

Green Lentil Curry

This green lentil curry made with green lentils, coconut milk, tomato paste and spices is an old-old recipe of mine that was screaming for picture makeovers. I also re-tested it to make stovetop and slow cooker friendly. So, you have 2 options depending whether you want to come back home to “an Indian restaurant” or rather quickly whip it up on a stovetop while sipping on a glass of wine and listening to Frank Sinatra. The latter is my favourite way to cook (sans wine most times of course)…

Slow Cooker Chicken Tikka Masala

Just look at this slow cooker chicken tikka masala! Low and slow or high (hi) and bye. Fall and busy life quickly reminded me about my abandoned during summer months friend – slow cooker. There is nothing, absolutely nothing, better in the world than coming home from an ice rink to a warm cooked dinner waiting for you on a counter!!! If you work you must own a slow cooker. It can prepare Slow Cooker Thai Chicken Thighs and Crockpot Buffalo Chicken Chili. OK, it sounds better than a husband because…

Healthy Pumpkin Soup

Eating easy pumpkin soup (so darn easy so I get you now!) and celebrating all things Halloween is still new to me. I see how my kids’ eyes light up and I wish I could relate. Growing up in Ukraine, we celebrated Fall by juicing apples, canning apple juice and mushroom picking in a nearby forest. Fall also meant it was time to start eating jams canned during summer months as there was no fresh produce available till next summer. We really survived on canning everything, with salt…

Breakfast Quinoa in a Slow Cooker

I just returned from Los Angeles and truly wished this Breakfast Quinoa was waiting for me on a counter this morning. I made this recipe and took pictures last week and am making again tonight. I had to send kids to school/daycare with emergency Costco’s cheese pizza and at least all organic packaged snacks and baby food pouches I brought from attending the ShiftCon. I’m staring at these photos and they are very refreshing compared to the collagen diluted in water and protein shakes I have consumed today….
