Thai Cauliflower Rice

This Thai cauliflower rice after past weekend that has been an absolute nightmare – we spent 46 hours without power due to a windstorm. See, there is always a payback for a super fun weekend before. Even with a gas stove, by Sunday night we were almost suicidal. I would never think that in 2015 a windstorm can leave 500,000 people without power or running water. Some houses spent 72 hours without power. We managed to save our food by eating it, and placing bags of ice into…

Healthy Cookie Dough Ice Cream

I made this healthy cookie dough ice cream for kids when they had friends over and it was all gone. No wonder as it was creamy, chocolatey and sweet. Made with organic coconut milk, local raw honey, organic chocolate syrup and organic Qi’a bars. Little bits of bar tasted like cookie dough. You can use any flavour you like. I used Roasted Peanut Dark Chocolate and Mocha Cocoa Hazelnut.

Cilantro Coconut Brown Rice

This coconut brown rice turned out fantastic! I need an assistant. Sigh. My brain is literally exploding with recipe ideas, I have time to make 50% of them, the rest is in my dreams. I have enough energy to post about 4 recipes a week. Right now I have 4 recipes photographed and ready to go but who would edit pictures and write up the recipe for me?! I love cooking and writing the actual post but admin part of my blog drives me bananas. Not to mention…

No Bake Banana Cream Pie

Have I ever mentioned how hard it is to be an immigrant?! You are not “there” and not “here”. Honestly, I will never be “here” 100% and I am OK with that. We love where we live but we will never be true Canadians like our children who were born here and have absorbed this culture from Day 1. Me and Alex talk about it often…Immigration has impacted our social lives greatly but it was the sacrifice, and we finally have found a way to enjoy ourselves in the…

Healthy Key Lime Pie Bars

A few weeks ago we started to get “boiled” here in Vancouver and I think I “spit out” about 5 no bake desserts during that time. Global warming at its finest because it is only May. I made healthy chocolate ice cream a gazillion times, vanilla popsicles), no bake black bean brownies and these healthy key lime pie bars.

Healthy Chocolate Ice Cream

Light, creamy and full of chocolate, this 3 ingredient Healthy Chocolate Ice Cream is our family’s favourite I have been making all winter long. Just been waiting for hot weather to hit our neck of the woods to share it with you. I find this ice cream easier to make than a traditional dairy one, and I believe it is tastier and healthier. My kids absolutely LOVE ice cream and do not object a slight coconut-y flavour of coconut mango ice cream and vegan vanilla ice cream I make. Because this…

Vanilla Popsicles

3 ingredient vanilla popsicles that my kids couldn’t wait for to set! I thought maybe darkish colour would put them off. Nope, not a problem. I even added cacao nibs for an antioxidants boost and boys were particularly looking for them in every lick or bite. I thought kids would find them bitter but no way. Cacao nibs add a nice crunch, chocolatiness without extra sugar and quite a few nutrients. I published my first cacao nibs recipe last week and I suspect there will be way more.

Coconut Mango Ice Cream

Ice cream and dark chocolate are my 2 favourite desserts! Last summer I bought my first ice cream maker (very simple one – it might be louder but I don’t make ice cream often enough to justify spending $70 on an ice cream maker) and started making my own healthy ice cream. I was a bit sceptical if kids would love this coconut mango ice cream since the taste is so coconut-y but they did! Since then, I have added healthy chocolate ice cream, vegan vanilla ice cream, mixed berry ice cream…

30 Minute Chicken and Cauliflower Curry

With a perfect balance of lean protein and vegetables, this chicken and cauliflower curry recipe can be made all vegan using extra cauliflower and served over brown rice or quinoa. Mild enough for the little ones. Large skillet for leftovers, I love them – teriyaki chicken and cauliflower skillet, shrimp quinoa with asparagus and garlic butter, and quinoa skillet with chicken and garden veggies. Make it with light coconut milk if you are calorie conscious or go full fat for a creamier version (next time I’m doing that). No matter…

Flourless Pumpkin Muffins with Coconut

These vegan flourless pumpkin muffins are nothing less than a nutrition powerhouse and are only naturally sweetened (and I’m not talking about maple syrup). Skip the drive through or a bowl of sugary cereal, and give your body what it’s asking for first thing in the morning. And to make the mornings less hectic, make 2 batches and freeze. Defrost the night before on a counter or pop in the microwave. If you are having a Starbucks muffin or a Tim Hortons donut for breakfast and thinking you are OK, let me tell…
