Moroccan Lentil Salad

Happy Meatless Monday and I hope you had a great Father’s Day yesterday. Pina Colada Quinoa Protein Muffins Recipe

Follow my blog with Bloglovin These muffins are a result of a desire to make pina colada cupcakes with coconut frosting and shaved coconut flakes on top, an effort to keep up with the grain and flour free desserts trend and a curiosity of what happens if you add quinoa to muffins. Coconut Chia Gel

Follow my blog with Bloglovin Chia gel is basically chia seeds soaked in any liquid: water, juice or milk. This Coconut Chia Gel is great for making any kind of coconut flavoured desserts like cupcakes, macaroons, cookies and even cakes. I made this gel specifically for the Protein Chia Macaroons. They turned out just right: crispy outside and soft inside.

Greena Colada Green Smoothie

Let’s call it Greena Colada…I’m in a mood of name calling today…And talking…Go ahead. Get addicted. Guilt-free. Extremely healthy and addictively delicious. If you are tired of regular blah hard core green smoothie, try this one for  a change. I promise you won’t taste kale. It’s yummy! Very springy, summery and tropical. I get tired of my Magic Bullet Green Smoothie. Lately I’ve been using a lot of coconut milk in my recipes and this smoothie is no exception.

If it’s good I remake it, take pictures and post it here. Sometimes I test the recipes 3 times. It’s rare but it happens. I loved this particular coconut mango chia pudding from the very first try! It’s my favourite out of all chia pudding recipes I made last month.
