Healthy Pumpkin Oatmeal Cookies

It is hard to write about only healthy pumpkin oatmeal cookies when so much is going on inside me. I will be plain honest. So much of what I do in my day to day life is tied to darn cookies. Why? Just like baking anything pumpkin is not typically done in Spring, the same way my life is not my typical daily life lately. See, I had this recipe sitting in my drafts for over a year. I remember baking the cookies, everyone loving them and thinking to save the…

Avocado Mint Fudge Bars

I seem to be always behind the masses including avocado fudge and coconut oil fudge. I could never play a team sport. I hated team projects at university. I think I could never work for someone either. I really like to write and sing my own tune and so far it has worked for me. Christmas just passed and here I am with avocado peppermint fudge bars in January. Or I see so many food websites posting recipe videos and I love watching them (do you?) but inside I feel…

Anti-Inflammatory Red Smoothie

Tasty, pretty and healthy red smoothie with raw beets, juicy strawberries and a generous dose of healthy fats from coconut oil. Beets: the antioxidant betalain gives them their signature color and is an excellent anti-inflammatory. When added to the diet, beet benefits include repairing cells and adding high levels of inflammation-fighting potassium and magnesium (Source).

Healthy Gingerbread Fudge

This healthy gingerbread fudge does not contain condensed milk or loads of sugar but rather healthy fats and naturally occurring sugars. The sacrifice is you have to keep it frozen and serve right before enjoyment. So, put on your cutest apron, quickly zoom between the guests and stack it back in the freezer.

5 Ingredients Nature’s Path Chocolate Peanut Butter Bars

If you need a quick party dessert, these chocolate peanut butter bars are for you! Made with Nature’s Path premium organic dark chocolate & peanut butter granola, homemade chocolate and coconut cream. That is only 5 ingredients! And if you use melted store bought organic dark chocolate that would be 3 ingredients! I’m seriously minimalistic these Holidays. This recipe is a submission for a #FestiveFoodie contest which you can read all about below.

Coconut Oil Fudge

So, this coconut oil fudge. I have not had added sugar, even maple syrup or honey for 3 weeks now. This Halloween I decided not to even have 1 candy because when they say sugar is more addicting than crack that applies to me. If I don’t have it, I don’t crave it. Otherwise, I could easily eat 2-3 servings of ice cream or 1 chocolate bar. So, on Halloween I had my wine and a few of these fudge bars. They were so good, later on I turned the…

Healthy Zucchini Brownies

I baked these healthy zucchini brownies 3 times last week. Everyone loved them so much but needless to say we are “brownied out”. The rest went to the freezer. Made with coconut oil, raw honey and whole wheat flour these healthy zucchini brownies are super healthy. And I’m the one who doesn’t run away from organic wheat.:) It was my first time making zucchini brownies but after enjoying black bean brownies recipe so much, I had a feeling I would love these too. Black bean brownies are very fudgy where…

Whole Wheat Drop Biscuits

I loved the biscuit topping in the Fruit Cobbler I made a few months ago so much that I decided to make a savoury version to serve with soup a few days ago. I know it is summer and hot but I still use the oven regularly. I can’t imagine not turning on the oven or stove in summer (this year I got smarter and installed a portable AC in the kitchen). Are we going to eat chia pudding till Halloween or what?! We do not eat much meat…
