Tex Mex Rice and Beans with Zucchini

Well, hello there. I’m back. I disappeared from here for like 4 days, which is unusual for me. I feel like Friday – Sunday, and even Monday this week, have been a blur. A good blur of happy family life but still a blur of hundred bank/car/mall/paperwork errands, kids’ hockey at 7AM and socializing with a bunch of screaming kids and the most fun adults. Which is all great because this is normalcy you crave once the real life problems strike! We all go through black and white phases in…

Cauliflower Shepherd’s Pie

Cauliflower Shepherd’s Pie is essentially a dog pile (a new word I learnt during Kyle’s last hockey game) of veggies. And just to forewarn you – I’m not a potato hater but rather lover (see my last weekend eats). How can I be Ukrainian and hate potatoes when we ate them every day?! Potatoes are not bad for you. I just wanted to have fun with cauliflower. And honestly I thought I had a genius new recipe on hands which proved to be a nonsense once I did my…

Vegan Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Like lemon mint vinaigrette in this vegan coleslaw with brown rice elbow macaroni, corn and edamame. It was delicious, crunchy and refreshing! A few years ago I started to develop acne along my jaw line. Acne I never had before. Apparently it is common among adult women. I also felt my hormones were completely out of whack around ovulation and period times, where as…

Butternut Squash Noodles Tex Mex Style

On Monday, February 29th, I woke up pissed. What does it have to do with a spiralized butternut squash noodles recipe? All and nothing. I was pissed at Sunday’s fiasco to go skiing only to find a fog, wind gusts and melting snow when we pulled up to the mountain. At Alex car’s dead battery so I had to drive him to the train station at 7AM. And at myself for being lazy and not working out last week. So, I was pissed, quietly pissed…

Quinoa Stuffed Eggplant Tex Mex Style

When I was a kid, August always meant an abundance of eggplant dishes at dinner table. That is when eggplant is in season in Ukraine and we better “stock up” our bodies with potassium because you won’t get it for another 11 months. There was no bananas which explains why 16 years later after immigration and I still can’t stop eating them. My favourite fruit ever! Anyways, traditional Ukrainian eggplant dishes consisted of panfried eggplant rounds dipped in flour, garlic, salt and pepper. Or the same rounds without flour but layered…

Slow Cooker Chicken, Corn and Lentil Soup

You know how some recipes have stories?! My story behind this to-die-for Tex Mex flavoured slow cooker lentil soup with chicken and corn unfolded as following…On Friday is my day off. Well, I mean a day off from being a blogger. Moms are really never off, let’s be real. Friday is the day when I do chores piled up over a week. So, this Friday a chore was painting doors and trims. I’m slowly refreshing all of them throughout the house. Yes, I love painting and handyman work. Alex…

Garlic Chicken, Zucchini and Corn

This Garlic Chicken, Zucchini and Corn is a 20 minute dinner idea that was inspired by my Ukrainian roots. Last Thursday, I received another organic produce delivery with extra zucchini that I substituted for potatoes. It is hot and my body is not craving comfort potato dishes. Organic zucchini – yep.

Healthy Corn Fritters with Vegetables

Vegetables fritters is one of the easiest and budget friendly vegetarian meals! Yellow, chunky and thick, these cakes have been on my mind ever since I saw them on the Kitchn. But I was craving a texture and taste of healthy corn flitters without flour. You know when you bite or tear a piece of, it breaks. That one. I make vegetarian fritters all the time, just haven’t had a chance to remake them since testing. I have cabbage and cauliflower fritters on my “to post list”. I would love to hear…

Quinoa Vegetable Soup

I thought I would share my go-to Russian soup recipe with you. It is super simple and tasty. Fills you up a cheap way – with liquids. Of course, some croutons, tortilla chips or cheese would make it even more delicious but I kept this quinoa vegetable soup vegan for health reasons! Animal products should be enjoyed in moderation and we need to eat more vegetables. I didn’t calculate nutritional info because frankly the pot was so huge, measuring it would take 10 minutes.:) Just enjoy wholesome food,…

Ezekiel Tortillas Pizza with Corn, Peppers and Garlic Sauce

I always have my favourite organic Food for Life sprouted grain tortillas on hand, and had an idea to try them in a pizza for months now. To me ezekiel tortillas just look like a perfect healthy thin crust pizza dough. And the best part is – I can buy it. I’m not a baker of all things bread plus they are healthier than any bread. If you are looking for a healthier pizza recipe, you can also check out Cauliflower Pizza and Sweet Potato Pizza recipes. This recipe…
