This chicken noodle vegetable soup is easy, budget-friendly and my boys couldn’t get enough of it. It comes together in 30 minutes and is a great way to “clean up” your fridge’s veggie drawers and freezer’s veggie bags. For vegetables, I added carrots, potatoes, cabbage and tomatoes. A bowl of bean and mushroom soup is so comforting on a rainy Fall day or a snowy Winter night. Meaty, hearty and a tad creamy, this soup is also healthy: full of fiber, protein and low in fat. I have also included a slow cooker version for those who are super busy. The soup also freezes extremely well.
