Savoy Cabbage Salad

Ever since returning from San Francisco road trip, I have been living off of cold healthy brown rice pudding for breakfast, salads for dinner and healthy iced tea (recipe coming this week) in between. I came up with this savoy cabbage salad recipe one hot night when all there was in my fridge a savoy cabbage I couldn’t just pass by at the farm stand, empty veggie drawers and a container of Greek yogurt. I’m “addicted” to savoy cabbage this summer even though I have always thought of…

Lettuce Tomato Cucumber Salad

In Ukraine, there are as many variations of lettuce tomato cucumber salad as there are cooks. I grew up eating this salad in summer and it was always different depending on what was in my grandma’s garden and fridge. This is my version of traditional Eastern European garden salad, and believe it or not, it contains no garlic, rather one secret ingredient that makes this salad SO MUCH better than any other garden salads. I based my chickpea avocado salad on this lettuce tomato cucumber salad, and this shrimp avocado tomato…

Ukrainian Dill Coleslaw

Moving to West Coast 8 years ago made me feel the way I never expected to – I miss snow (just sometimes). A powder that squeaks under heavy footsteps. The one that makes entire world so quiet. I used to have it every winter as a kid. Once a week after dinner my uncle would order me and my cousin to dress warm. We would pull on real fur and leather winter boots, put on rabbit knitted toques and tighten the belts on wool coats. Grab a linen bag and we…

Lemon Dill Shrimp, Zucchini & Peas in 15 Minutes

What a great true summer weekend we have had! How was yours? On Friday temperatures have soared up to +30s C and we couldn’t get enough. I went for a walk (Friday night) and run (Saturday morning which was dumb-dumb because of cottonwood allergies and crazy heat) on the dykes. Hit the farmer’s market (kids lost iPad privileges permanently) and fireworks with the family on Saturday. And on Sunday we cleaned up the yard and spent afternoon till sunset at the lake. At home I had a glass…

Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Like lemon mint vinaigrette in this coleslaw with brown rice elbow macaroni, corn and edamame. It was delicious, crunchy and refreshing! A few years ago I started to develop acne along my jaw line. Acne I never had before. Apparently it is common among adult women. I also felt my hormones were completely out of whack around ovulation and period times, where as all…

Healthy Spanakopita Chicken Roll Ups Recipe

Happy Monday! If Monday can ever be happy?! I think Sunday night is worse.:) 2 weeks ago Canada celebrated Thanksgiving. Meet our dinner – healthy chicken thighs stuffed with feta and dill, rolled in Panko breadcrumbs and baked for only 25 minutes. Super easy chicken recipe! I haven’t done roll ups in years and was intimidated at first, for no reason. You don’t even need to use toothpicks – the roll ups won’t unroll.:) If you are like me and can’t handle eating huge turkey 2 months in…

Lemon Quinoa Salad

Another quinoa recipe. Yes, I’m on a quinoa roll this week. I already made cilantro lime quinoa salad, now this lemon quinoa salad. Can’t help it. It just happens! I keep making quinoa. But wait, it gets even better! I made it actually 3 times. And that’s between Tuesday and Wednesday, so in 2 days. I was out of lime and avocado to make cilantro lime kind but already had cooked quinoa. I opened my fridge and it happened – lemon quinoa salad with sliced cherry tomatoes, crumbled…
