Veggie Mac and Cheese Muffins Recipe

Things are slowly settling back to normal after summer. Besides my mom coming for a long visit and me and Alex going for a dream team vacation of the decade, we are back to a routine. I did share on Tuesday oh how much I have missed school. I love summer but I equally love the first few months of fall when it is still warm enough, kids are busy and I have time for myself. Even walking by myself, even as close as to and from school makes…

Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Like lemon mint vinaigrette in this coleslaw with brown rice elbow macaroni, corn and edamame. It was delicious, crunchy and refreshing! A few years ago I started to develop acne along my jaw line. Acne I never had before. Apparently it is common among adult women. I also felt my hormones were completely out of whack around ovulation and period times, where as all…

Kale Edamame Salad

Disclosure: I was asked to participate in the “#SoyInspired for Thanksgiving” campaign as a member of the Healthy Aperture Blogger Network on behalf of The Soyfoods Council. I was compensated for my time. However, I have been cooking with edamame beans forever and recommend only products that I love and are beneficial for our health. Japanese Quinoa Salad Recipe

I love Japanese food. In fact, that’s the only food we eat when we go out. Because it is hard to prepare good quality sushi and sashimi at home, I’m willing to spend money on it. So, it was nice to make this Japanese quinoa salad at home and enjoy my favourite Japanese flavours of the Ginger Soy & Sesame dressing combined with edamame beans, eggs, carrots, cucumbers, scallions and sesame seeds.

Chopped Caprese Salad with Edamame

Chopped caprese salad with all ingredients of a caprese salad combined with edamame beans for extra protein and just because I love them. Oh, and persian cucumbers, those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado, like avocado fruit salad and avocado lettuce salad. This superfood is full of healthy fats, so don’t worry.

Farro Salad with Feta

I just got back from an eight day camping trip (I know!) where I made similar farro salad with feta sans edamame and a fancy dressing. Crunchy edamame beans, juicy sweet watermelon, creamy feta cheese, tangy zesty arugula drizzled with honey basil vinaigrette. Delicious! You could swap sweet green peas for edamame and avoid feta to make the salad vegan or if you don’t have it. Edamame are fresh soybeans full of protein, fiber and folate. You can find them sold shelled and frozen in a bag.
