Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Japanese Quinoa Salad Recipe

  Quick gluten free salad with edamame, cucumbers, scallions and Ginger Soy & Sesame dressing. I love Japanese food. In fact, that’s the only food we eat when we go out. Because it is hard to prepare good quality sushi and sashimi at home, I’m willing to spend money on it. So, it was nice to make this quinoa salad at home and enjoy my favourite Japanese flavours of the Ginger Soy & Sesame dressing combined with edamame beans, eggs, carrots, cucumbers, scallions and sesame seeds.

Chopped Edamame Caprese Salad

Chopped Edamame Caprese Salad. What is that?! All ingredients of a Caprese Salad are chopped and mixed with edamame beans for extra protein and just because I love them. Oh, and Persian cucumbers. Those water packed, cancer fighters and hangover curing little guys. And if you ask me, no good salad is complete without avocado. This superfood is full of healthy fats, so don’t worry.

Edamame, Watermelon & Arugula Farro Salad

I just got back from an 8 day camping trip (I know!) and made a similar salad sans edamame and a fancy dressing, while having my friend Nicole over for dinner at our campsite one night. I’m amazed still being married and I’m not shocked I’m not a hot dog, S’mores and Lays girl. Give me my clean food!
