Healthy Instant Ramen

Whether on “Oops, what’s for dinner?!” day, lunch or after an exhausting shopping trip to Costco, I have made healthy instant ramen numerous times in the past month. We haven’t bought ramen for over a decade for health reasons but Costco has convinced me I should get not 1 but 2 packs of Lotus Foods organic ramen on sale. Inside are plain noodle blocks which at first upset me (no poisonous packets but no healthy seasoning either), but I quickly saw fun in making the most flavourful healthy instant…

Oatmeal Pizza Crust

I am here not to tell you that you should drop your family’s favourite pizza recipe, stop making pizza or that pizza is bad for you. No, none of that is true. What I am here to offer you is an easy flourless oatmeal pizza crust solution, if you are not “a flour girl” (oops, that sounds weird but I like it) like me and are looking for a simple yet lighter Friday night pizza solution. What I mostly love about a rolled oats pizza crust is an absence…

Sweet Potato and Eggs One Pan Dinner

These sweet potatoes and eggs. This one pan dinner came out of sheer desire to eat a wholesome dinner and my lack of energy. Kid have sports around dinner time, so I either make dinner before or after, and it gotta be quick. I’m exhausted either at 4PM or at 6:30PM. So tired that I decided to cut sweet potatoes in half instead of chopping. Similar to sweet potato skillet tired.

Chipotle Sweet Potato Oatmeal Muffins

Ah, nothing feels better this morning than eating two (or three) sweet potato oatmeal muffins, with a cup of coffee (yes!) after sending boys to school. My breakfast made yesterday (or two-ten days ago) with oats and sweet potato. Workout done yesterday. Kids walked to school. I’m still in PJ’s. Seriously, I am in my days of mom glory and there is no going back. Yesterday I did something very much outside of my comfort zone. Life changing. It is a surprise about which you will hear early…

Peanut Butter Protein Pancakes

I managed to whip up these easy peanut butter protein pancakes last week before my little family’s world was turned upside down by Sunday. Today is my birthday. I turned 35. I am celebrating it with a heart half heavy and half full. Three days ago we received a phone call that my mother in law passed away suddenly and tragically at the young age of 67. My poor husband was on Vancouver-Tel Aviv flight 15 hours later. My heart is breaking for him and his sister but I…

Healthy Almond Cake

Honestly, there is a reason I don’t bake. If I start experimenting with baking I just know that I will be eating non-stop. Eating is a part of my job. Like with this flourless almond cake recipe – I swear me and Alex ate most of it when I first made it for Easter. Yes, it is a healthy almond cake but it is still sugar and a cake. I ain’t gonna fool myself. I can’t stop with desserts so I trained myself better not to start at all. Plus…

Vegetarian Oatmeal Patties

Meat is expensive. Can’t deny that. Organic meat costs even more. So, I find my ways to save money on meat in 2 Ukrainian ways: Back doors – just like with Chernobyl train tickets I got my ways to get free organic meat. My mom supplies us with venison her and her husband hunt in the prairies. I turn cheap ingredients like veggies and grains into large volume soups and filling fritters, burgers and cakes. Yesterday it was vegetarian oatmeal patties. What happened yesterday anyways?! By noon, I found myself pulling…

Chocolate Coconut Flour Muffins

Remember banana coconut flour bread and 9 lbs of coconut flour? You would think the situation would be getting better and every month I would be using more and more of it slowly diminishing my coconut flour barrel. That is not the case. More than that, I am now a hoarder of 13 lbs of coconut flour. Hence, chocolate coconut flour muffins. There are 2 underlying reasons why: My neighbour gave me her bag of Costco’s coconut flour. She had no idea what to do with it and was…

Spaghetti Squash Quiche with Vegetables

There is everything delicious about the balsamic veggies filling and nothing traditional about the crust of this spaghetti squash quiche. But I realize my entire life is far from “traditions” of the locals. Let me tell you how I see today’s North American everyday life through my Eastern European eyes. Briefly. Countertops are washed with Lysol and windows with Windex. Clothes is washed in Tide, with Downy and then dried with Bounce. Becel is butter. Scents are plugged in houses and cars. Bathrooms contain air freshener. Toilet paper is of…

Eggs and Bacon Breakfast Quinoa Bake

Healthy Christmas breakfast with eggs and bacon prepared the night before. All you have to do is place this breakfast quinoa bake in the oven on a Christmas morning, go open presents and come back to top it with fresh diced fruit because avocado and tomatoes are not vegetables. Adults can add a healthy dose of a clean hot sauce – this one is our favourite right now! And green onions too. You could add a sprinkle of cheese however for me, personally, bacon aroma was enough of flavour and…
