Baked Spaghetti Squash Casserole

You are either thinking how tired you are of spaghetti squash or very happy to see this new recipe for a squash sitting in your fridge right now. Personally, between spaghetti squash mac and cheese, tex mex leftover turkey spaghetti squash skillet and this baked spaghetti squash casserole I made at least twice each in the past month, I think I’m “squashed out” until after Christmas. But this baked spaghetti squash casserole was GOOD! In case you are still planning a Thanksgiving menu, this healthy and clean bake should go…

Banana Coconut Flour Bread with Peanut Butter

I made banana coconut flour bread without any added sugar, not even maple syrup or honey. Sounds just like coconut oil fudge from the other day, right?! I do not like to post similar recipes in a row but I had 8 bananas laying in a cupboard waiting to ripen, so they were all ready at once. I have to hide them from my monkeys. Meet 9 lbs of coconut flour from my pantry. A few years ago I was on a gluten free kick for a bit and…

Flourless Pumpkin Pancakes

Once a week I like to serve breakfast for dinner just to give myself a break. Or even on a lazy Sunday night like with these flourless pumpkin pancakes which I whipped up after a crisp evening Fall walk. I felt energized and fresh (I tried hard not to inhale laundry VOCs). After a Thanksgiving feast we had past weekend (so technically my Sunday night was Monday) I felt like a fit recipe without sugar and flour. I like to make 3 kinds of recipes: healthified classics, my own…

Cauliflower Biscuits

I am on a cauliflower kick this week. Thai cauliflower rice, cauliflower biscuits…I just want to clarify something – I’m fully aware that these are not real biscuits. And so isn’t cauliflower pizza crust recipe really a pizza and cauliflower breadsticks aren’t actual breadsticks. 2015 is an era of everything mock and limited – cashew and cauliflower sauce instead of a dairy sauce, “gluten free” frozen peas and muffins made with 3 ingredients. Some substitutes I can take and some…Honestly, I find some things weird…Like, zucchini noodles with sun dried tomatoes cashew sauce,…

Summer Fried Brown Rice

I love making fried rice because sky is the limit in terms of ingredients and it is a great “fridge cleaner”. I made one mistake this time by making it in a wok because I simply forgot to use a large skillet to make the rice crispy. In a wok, it comes out more steamed than fried. And crispy rice is the most fun part – crunchy, oily and fried previously cooked rice. It can be fried in a wok in restaurants because the heat is so high but at home…

Clean Eating Asparagus and Caramelized Onions Strata

I was going to say that you could cook this amazing strata with asparagus and caramelized onions for coming up Mother’s Day but not sure why would you cook if you are a mother?! Unless you are cooking for your mom.

Mini Green Frittatas

OK, these might not be the most appetizing muffins you have ever seen but they are delicious! I’m posting my Green Frittatas anyways.:) I have said it before and will say it again – people are too hung up on the way food looks! I can tell it from my own experience when I know a recipe with cheese goes viral and Green Smoothie is barely getting repins.

Sweet Potato Egg Bake with Taco Seasoning

Breakfasts on-the-go are becoming a staple in my home. Me and Alex just love breakfast waiting for us in the fridge. I am also trying to make these breakfasts kid friendly because I wouldn’t let my kids have cereal every morning, even if it’s organic. Since breakfast has to include complex carbs my choice always turns to whole foods like oats, quinoa and sweet potatoes. I do not eat bread much, so quick toast isn’t an option. I have never incorporated sweet potato in a breakfast dish before and was absolutely…

Quinoa Egg Muffins with Sundried Tomato & Spinach

These quinoa egg muffins are a complete breakfast on the go or a snack. So easy and delicious, I recommend to double the recipe and freeze.are like mini omelettes but better! Filled with complex carbs from quinoa and healthy fats from flax or chia seeds, these egg muffins make a complete breakfast on-the-go or a snack. And I highly recommend making a double batch and freezing. Eating clean and working out, especially lifting, means 5 meals a day for me and Alex. Plus 2 kids => that is…

Pad Thai Zucchini Noodles Salad

Oh my, this cold and saucy Pad Thai Zucchini Noodles Salad wow-ed me and I thought I can’t surprise myself anymore. Somehow, for the longest time I thought bean sprouts would go so well together with zucchini noodles, and I was right. Crunchy and fresh veggies, combined with lightly browned tofu, scrambled eggs, sweet shrimp, roasted peanuts and “drowning” in healthy version of Pad Thai sauce.
