Summer Fried Brown Rice

I love making fried rice because sky is the limit in terms of ingredients and it is a great “fridge cleaner”. Pad Thai Zucchini Noodles Salad

Oh my, this cold and saucy Pad Thai Zucchini Noodles Salad wow-ed me and I thought I can’t surprise myself anymore. Somehow, for the longest time I thought bean sprouts would go so well together with zucchini noodles, and I was right. Crunchy and fresh veggies, combined with lightly browned tofu, scrambled eggs, sweet shrimp, roasted peanuts and “drowning” in healthy version of Pad Thai sauce.

Quinoa Breakfast Bake

This quinoa breakfast bake has been waiting for me every morning during the past week. Delicious, nutritious and the best part is I didn’t have to cook it. Just place a slice on my plate, top with a dollop of non-fat Greek yogurt (highly recommended) and a few berries or bananas. I even didn’t warm it up because we decided to get rid of microwave for health reasons.

Eggplant Fritters

Meaty juicy eggplant fritters dipped in a peppery egg wash and fried with no oil. Serve as a side dish for meat and poultry, on a whole wheat bun to make a veggie burger (use 2 patties), inside a whole wheat pita as a sandwich or on its own as a vegetarian cutlet/savoury pancake. These no fuss eggplant fritters are versatile, quick and dirt cheap. No grinder, food processor or pre-baking is required either.
