Sweet Potato and Eggs One Pan Dinner

These sweet potatoes and eggs. This one pan dinner came out of sheer desire to eat a wholesome dinner and my lack of energy. Kid have sports around dinner time, so I either make dinner before or after, and it gotta be quick. I’m exhausted either at 4PM or at 6:30PM. Shrimp Greek Salad with Arugula

While the rest of America is cooking turkey and baking pies, I seem to be on a salad kick. Thanksgiving in Canada has already passed and I’m not in a mood for turkey till Christmas. I make Greek salad every few weeks. Often with whatever I have on hand. I love it because it is chock full of vegetables and Mediterranean flavours – olive oil, balsamic vinegar, garlic, lemon, oregano etc. Plus my kids eat it, especially olives and feta, minus red onion. Fair enough.

Mediterranean Baked Zucchini Sticks

It’s zucchini season, yay! I have recently discovered my love for raw zucchini, especially in a form of chips. Slice them thinly and use instead of chips to dip into strawberry mango salsa, garlic hummus recipe or Greek salad layered dip. This way, you can enjoy more of an appetizer itself. Even with a healthy dip, calories add up quickly when digging into it with chips.
