Chicken Breast with Tomatoes and Garlic

Quick and healthy chicken with fresh tomatoes that are in their prime ripeness end of August – beginning of September, and that I can’t stop buying during my farmers market haul every week. So juicy, sweet and tender local tomatoes are nothing like supermarket’s “cardboard” tomatoes we are about to experience, so hurry up and eat them while you can. If you need help with eating tomatoes (half of mine disappear as slices sprinkled with salt), check out my tomato and red onion salad, lettuce tomato cucumber salad…

Sheet Pan Chicken and Potatoes with Roasted Garlic

I can’t declare that this sheet pan chicken and vegetables is the most exciting dish I ever produced, but that is exactly why I turned to a one pan dinner in the first place – I wasn’t very excited about cooking supper. The thing is that it works, in so many ways. So, I thought I would share although the process of roasting chicken, potatoes and broccoli might be the “I’ve been doing this forever” obvious to you, but I won’t know it until I share.

Sautéed Garlic Broccoli with Tomatoes

A rainbow of red and green in this sauteed garlic broccoli recipe doesn’t make me miss Christmas. The opposite – the smell and pictures sent me almost into tears realizing “oh, how I miss you, summer!” (I know I have big problems in my life, I know). Evening walks, naked legs and light. As much as I love holidays, I’m so happy they are over because the chaos of kids at home and visiting family, which we all know is good in moderation (sorry, mom and boys). The past few days, I…

Adjika Recipe

Ever since I posted cauliflower breadsticks recipe over 2 years ago and mentioned that I served them with my mom’s Ukrainian salsa, I have been constantly bombarded with requests for the recipe. I never anticipated “the breadsticks” to be such a hit and least expected Ukrainian salsa to be another hit. Just never know. So, I asked my mom for the recipe and she left the written version in Ukraine and her Canadian version is an eyeballed version. If you ever ask a European woman for a recipe you…

Grilled Chimichurri Chicken Recipe

Last summer our entire backyard was undergoing major renovation and grill was sitting in the middle of a dying lawn next to a hottub. Obviously, we didn’t grill all summer. I just checked and last time I posted a grilled recipe was this coconut cilantro chicken, summer of 2014. Makes sense. This year tuck your linen handkerchiefs under the chin as things are about to get messy, drippy and charred on iFOODreal. This grilled Chimichurri chicken is fatty, juicy and oh so flavourful with fresh garlic, parsley and…

Smashed Cauliflower Bites

I find March to June the worst months to shop for quality produce. I am already tired of squash, kale and citrus. Asparagus – I made broiled asparagus with garlic and vegan asparagus soup. I had enough of fragrant bathroom trips. For almost 3 weeks I couldn’t find organic apples and now that I did they cost an arm and a leg. As I glance through magazines and blogs mentioning spring’s produce bounty I am honestly puzzled where do those people live?! Or are they talking about new greenhouse’s crops? So, I am…

Baked Salmon with Cheese Recipe

Baked salmon with cheese is a common dish in Russian households. Salmon fillet is baked with white wine, mayo and cheese. For years, I wanted to recreate this salmon a healthier way. I skipped mayo because I thought cheese was a splurge enough. Also cheese is fatty, salmon is oily, end result should come out quite moist. And it did! Instead of wine, I squeezed lemon juice on salmon, then rubbed with freshly grated garlic and sprinkled with salt and pepper. Topped with cheese.

Broiled Asparagus with Garlic

I have a broiled asparagus with garlic recipe for you that keeps your hands oil free and mess to a minimum. And it is so easy, my 9 year old makes it! Not to mention that all you need is 5 ingredients 4 of which are asparagus itself, oil, salt and pepper. The 5th one is garlic and there is no way around it because I am Ukrainian. This broiled asparagus comes out crunchy and still tender. The only way anyone should be eating asparagus. No mushy boiled…

Parsnip Fries

I used to have a friend. Used to because I used to. So, that friend used to make parsnip fries in a skillet. Parsnips are sweet. Once baked, they reminded me a bit of sweet potato fries. At first, when I placed parsnip fries in the oven I thought they would never crisp. But they did as they cooked down. So, the day I was feeling all “blah” and made that kale grilled cheese, I also made parsnip fries to go with it. Here is the funny part, I find fries…
