Pan Fried Cabbage with Apples

Phew, what a week besides yummy pan fried cabbage and healthy pumpkin brownies. So glad it is over! Between trying to regain normal self after a week in an all-inclusive resort without kids, my mom leaving and a painful period, do I need to tell you that I was having a glass of wine every night?! I came to a conclusion that I am better off never pausing and tasting a life without a wallet and with a bunch of servants. As much as heavenly a week in Mexico was,…

Watermelon Protein Smoothie

This refreshing smoothie is made with superfoods & APF water filtered ice courtesy of GE Appliances Canada. It is finally HOT here on the West Coast, so last week we went to see a puppet show in the park. The entire time I had 6 eyes staring at me “Where are we?!”. As soon as boys polished off dinner and Alex started making fun of foxy loxy I knew it was time to go home. I am not sure I should bring up a music on the wharf even… Seriously, what is up with men,…

Carrot Ginger Salad Dressing

On Thursday, I had a jar of olives, box of spinach and can of club soda staring at me from the fridge. My fruit basket displayed 4 lonely bananas, 2 wrinkly mangos and going bad but I will keep you lime. What is for dinner? What IS for dinner, really? This question along with next question once dinner is on a plate “What is THIS?” are pulsating in my head 24/7. Many days I am already stressed about dinner the minute I wake up. I’m not going to sit here and…

Anti Inflammatory Tea

Sometime last month I got bored with all my beverages; that is before I started making kombucha from scratch and brewing lime iced tea. I pulled out a French press and started adding everything I had on hand to make caffeine free tea. Last thing I added was turmeric and apparently I came up with delicious organic anti inflammatory tea. Which, by the way, didn’t cost an arm and a leg. This healing tea is made from the ingredients in your pantry and fridge, and is so good for…

Orange Ginger Dressing

Food photography depends on weather like I depend on wine while raising my children. Today was a very grey day with never ending rain. So, I digged through my “to post” folder and found this Orange Ginger Salad Dressing. It is sweetened by oranges and spiced by fresh ginger. It is so good it deserves a post of its own. I already used it in making Winter Fruit Kale Salad and Citrus Quinoa Salad. I guess it is that good!

Citrus Quinoa Salad

So, this citrus quinoa salad…I love Fridays! My favourite day of the week when a whole weekend of craziness is ahead and a glass (or two) of wine I can officially talk about. And equally I hate Sundays because I just feel drained by then. Mixed feelings – I do find weekends fun but way more exhausting than weekdays. I don’t work on Friday and have my little boy at home to spend time together, whether playing Go Fish, painting doors or shopping at Costco. Vibrant days of living a dream….

Healthy Gingerbread Fudge

This healthy gingerbread fudge does not contain condensed milk or loads of sugar but rather healthy fats and naturally occurring sugars. The sacrifice is you have to keep it frozen and serve right before enjoyment. So, put on your cutest apron, quickly zoom between the guests and stack it back in the freezer.

Maple Ginger Chicken Thighs

Well, hello, gorgeous…maple ginger chicken thighs. How good do these look?! Not my recipe but rather my friend’s, Katie, from her new book Maple. This recipe confirms one more time how much I love chicken and how I could never give it up but rather enjoy local organic chicken in moderation. I just got a promotional email from an imitation meat company and another glance at ingredients list…nah, I’m a strong believer in rather eating good chicken. So, Katie’s book…is quite epic. Full of very simple mostly clean…

Lime Ginger Salmon

Sockeye salmon fillets marinated with lime zest + juice and freshly grated ginger for 10 minutes, and then quickly broiled. Serve this lime ginger salmon with Cilantro Coconut Brown Rice and you have a refreshing, tasty and healthy dinner in under 30 minutes. You can use any firm wild fish affordable in your area. I can think of halibut, cod, snapper, rockfish. Please buy wild caught only. I explain the problem with farmed fish in detail in this Thai Salmon recipe (another salmon recipe idea for you).

Healthy Gingerbread Loaf

I have never made a gingerbread loaf before but that bottle of organic molasses looked too sexy not to buy. I’ve been eyeing it for a year now. I always stayed away from molasses thinking they are unhealthy being a byproduct of sugar manufacturing. Ha, not the case, particularly with unsulphured organic molasses. It is a healthful sweetener containing a handful of nutrients and minerals. Gingerbread is entirely new concept to me although as a kid I remember little dark cookies with round white tops imported from Germany or Poland. They were…
