Sauteed Mushroom Spinach Salad with Mushroom Vinaigrette

A mushroom spinach salad that happened by a total accident. This is yet the tastiest spinach salad I have ever tried! I know there are so many spinach salad recipes and every year summer comes and goes, and I do not have a staple recipe I rely on. Just the way it was and no other explanation. Until I took my 5 year old grocery shopping with me last week… He wasn’t excited but I handed him a basket on wheels and said “Load it up”. Most kids love doing…

Garlic Honey Butternut Squash

Once my mom asked what she could help with in the kitchen. I said “Please peel and cut the squash”. By the time she was chopping it I have heard many complaints and the last one was “That is exactly why squash is so cheap!”. And that is exactly why I have barely any squash recipes on iFOODreal – I was simply never offered it. But I’m a big girl now who can decide what she eats. Ha! And I’m buying squash of all shapes and colours because…

Penne with Kalamata Olives, Garlic Roasted Tomatoes and Goat Cheese

Quick 30 minute pasta dinner that I made with a lot of Kalamata olives from a giant jar from Costco, farmer’s market tomatoes and organic soft goat cheese that had to be used up ASAP (leftover from making this salad). Then I added fresh garden basil and parsley, grown by me. I also quickly sautéed tomatoes in a new crop of garlic my neighbour gave me, for added flavour. Kale, Blueberry, Goat Cheese and Candied Pecans Salad

Uber delicious salad with curly or baby kale (best types for this salad in my opinion), organic soft goat cheese from pasture raised goats, local fresh blueberries and homemade candied pecans. All of this “swimming” in the Poppy Seed Dressing I posted yesterday. And all of this goodness is Clean Eating approved. It was so hard to keep the title of the recipe short but I almost did it.:) Ugh, I can’t stand long recipe names but sometimes there is no way around that. Maybe should have just said…

Spinach Salad with Raspberries, Goat Cheese and Candied Pecans

Spinach Salad with Raspberries, Goat Cheese and Candied Pecans

I have been making this spinach salad for years. Every time I make it it reminds me of a dinner at a high-end restaurant. This is how classy this salad is with fresh raspberries, crumbles of soft goat cheese and candied pecans. I always have a box or two of organic fresh spinach and a box of organic mixed baby greens on hand. I add spinach to smoothies, salads, frittatas, meats, soups etc. It’s so good for you especially raw.
