My right thumb’s knuckle can’t heal properly because I keep grating carrots day after day, baking oatmeal breakfast bars and scooping carrot cake truffles (coming on Friday). Tuna Salad With Avocado and Mango

Yes, I went there – I took tuna salad and loaded it with a bunch of fruit, drizzled with tangy homemade full fat yogurt dressing and added a big handful of dill. Now I can eat tuna salad. Warning: Completely random thoughts while whipping up majestic fluffy Buffalo avocado dip. Mixing romaine with hot sauce. Frank’s Red Hot sauce smells totally like a pub. Circa 2001. Pina Colada Protein Milkshake

Let me tell you how I envision my healthy path in 2016 since we started talking about yours. I really upped my game in a smoothie department and I’m shocked how fun it is to whip up different smoothies! Like this pina colada protein milkshake with Nature’s Path Coconut Chia granola, frozen pineapple chunks and Greek yogurt…So-so-so good and who would think to add granola to a smoothie, right?! Healthy Poppy Seed Dressing

As soon as I whisked Greek yogurt with honey for this healthy poppy seed dressing recipe, and did a first taste test, it reminded me exactly of a bottled version I stopped buying years and years ago. Creamy, light, sweet, with a hint of onion and a sea of poppy seeds. There is not much more to say about this dressing except you gotta make it and pour over some organic vegetables, fruits and nuts of your choice. My version of a killer poppy seed dressing salad coming next!

Healthy Vanilla Cupcakes

These healthy vanilla cupcakes came out perfect! Because Easter is around the corner, we decorated them with unsulphured and unsweetened organic coconut flakes (fancy grade) for “feathers” and organic naturally coloured jelly beans for “eggs”.
