Vegetable Florentine Pasta

How can you “eat your veggies” and also enjoy a bowl of pasta? Just make this florentine pasta recipe where fresh garden meets whole grains in a very generous amount of flavourful Greek yogurt based sauce. Because what pasta is good without sauce unless you are a 5 year old?! I won’t lie, there was a period of time when carbs were my enemy. I cooked spaghetti squash mac and cheese and baked cauliflower biscuits. And don’t get me wrong, these dishes are delicious but I am way more…

Clean Green Bean Casserole Two Ways

Clean Green Bean Casserole #1 I will be very honest with you about the green bean casserole – I don’t love it. More than that I am not a huge fan of many fall vegetables and dishes. I’m just not and neither are my kids. I will cook and eat them but I much prefer fresh and juicy produce centered recipes. However, as kids are growing I want them to grow up with traditions. I want them to feel Canadian and included. Yes, I want that! I’m all…

Frozen Vegetables Stir Fry

I might as well call this recipe “Costco stir fry”. It is about time Costco pays me for 1,000 times I said “Costco” on my blog. Unfortunately, I think Costco is doing pretty fine without me. Sigh. So, no free coconut oil, Dave’s killer bread or PEI medley. What on Earth is Prince Edward medley anyways? Is that a Canadian thing? Is it sold in the US? Enlighten my Ukrainian brain please. Anyways, I grabbed this humongous Costco size bag of frozen vegetables for 4 main reasons: Organic. Cheap. It…

Green Beans and Chicken

This green beans and chicken is a 4 ingredient healthy dinner recipe, embarrassingly easy and saucy. Who doesn’t like sauce (“hi” peanut sauce chicken)?! My tomato sauce happens to be healthy and low calorie though. I wouldn’t call it a quick recipe but all work is really done by the stove and not you. Tomato paste really adds more depth to the tomato sauce. Plus this is a mess free recipe which I should develop more of. I spend hours cleaning my kitchen every single day.

Salmon Stir Fry

Salmon stir fry made with wild salmon, crispy green beans, meaty mushrooms stir fried with soy sauce, ginger and garlic, then topped with sesame seeds and green onions. 20 minute dinner that is high in protein, rich with heart healthy fats and low in carbs. Delicious! My kids were licking the plates. This salmon stir fry reminded me of my favourite Asian fusion restaurant – P.F. Chang’s. We always go there for dinner while in the US. Lots of healthy options, the staff is always welcome to customize your order…

Grilled Lemon Rosemary Chicken

Grilled chicken breast is one of my favourites. It is lean, tender and juicy, if cooked properly. My mom and grandma always said it’s the driest part of the chicken but I just love it. The marinade and right cooking method make all the difference though, for example take Greek chicken kebab recipe or miso marinated chicken. I think my ladies only ever made soup with chicken. We had no grills.

Fresh Parmesan Green Beans Recipe

Crunchy fresh green beans made with roasted garlic and coated in melted parmesan cheese. These are perfect any time of the year and especially for the BBQ season. Vegetarian and gluten free. It’s spring in Vancouver and these beans scream spring and healthy to me. I love french green beans from Costco. They are thin and already trimmed. But any kind of green beans will work.

Healthy & Cheesy Green Beans & Cauliflower Recipe

This was supposed to be cheesy and bubbly. And quick, easy & low fat vegetarian recipe. And that’s exactly how it turned out. French style green beans and cauliflower covered in cheese sauce made with garlic and paprika. Healthy vegetarian recipe that kids will love. Moms will love it too: 199 calories & 5 Weight Watchers points+! Very cheesy… And bubbly…
