Chicken Abruzzi

A few weeks ago, one Saturday afternoon, while shopping in the US (we live near the border and go across often), Kyle asked to have lunch at the Olive Garden. In my mind, I said good-bye to yesterday’s burnt 800 calories and off we went. You can imagine my eyes (we don’t eat out often, especially at Italian restaurants, duh) when I saw a lighter menu. I grew up on soups and I cook them quite often: buckwheat soup, Ukrainian borscht, slow cooker chicken noodle soup. Soups are fast, cheap and a great way to use any leftovers. You know that half tomato, yesterday’s sausage and 2 days old pasta?! Instead of a garbage can, they go into Olena’s…

Baby spinach, leafy kale, tiny chia seeds…All those are super foods and make this green stuff  > THE STUFF!
