Edamame Hummus Kale and Quinoa Salad plus a Giveaway

Disclosure: I was asked to participate in the “#SoyInspired for Thanksgiving” campaign as a member of the Healthy Aperture Blogger Network on behalf of The Soyfoods Council. I was compensated for my time. However, I have been cooking with edamame beans forever and recommend only products that I love and are beneficial for our health. Thanksgiving in Canada is long gone and I wish I had created this salad a month ago. I always feel salads are suffering at Thanksgiving and Christmas tables, since hostess’ energy is poured into turkey, dessert…

Kale and Quinoa Salad with Cinnamon, Apples and Walnuts

This is such a mouth, throat (literally, you just wait until it goes down) and heart warming kale and quinoa salad with sweet and zesty cinnamon dressing. Toasted walnuts, crispy apples, nutty quinoa and super powerful kale come together in this plant-based one meal salad. I won’t suggest it as a sore throat remedy but rather a 20 minute clean eating dinner recipe, heck yeah! I’m trying really hard to maintain more plant-based diet and this salad is a quick way of doing so. And please don’t think that my kids were…

Kale Turkey Pasta Bake

Whole grain pasta, fresh kale (or spinach), extra lean ground turkey topped with a reasonable amount of part skim mozzarella cheese and baked until golden. This turkey pasta bake is perfect for a fairly quick weeknight meal, leftovers the next day and a meal prep. You could even assemble the casserole and freeze with plastic wrap on top. When ready to eat, bake from frozen and increase baking time by 15 – 20 minutes. I remember when I was pregnant and almost due, I stocked up my freezer with…

Chicken Quinoa Kale Salad with Grilled Peach

Three things are grilled in this Chicken Quinoa Kale Salad: peaches, avocado and chicken. Then mixed with nutty quinoa and crunchy kale, sprinkled with feta for a savoury kick and drizzle with out of this world healthy Peach Ginger Dressing. One of the best salads I ever tasted and made! And one of the best ideas I ever had for a salad dressing – sweet, zesty and spicy. We had the salad for dinner with a glass of chilled Moscato, sitting on a patio. For dessert: organic grilled…

Creamy Mexican Kale Salad

Oh, this Mexican kale salad is sooo good! A heat wave hit Vancouver and I have been spending every day at the beach. Plus, my mom has been visiting, which is a precious gift. Needless to say, it’s too hot and little time to cook. My new gas stove warms up the kitchen way faster than my old electric one. Hearty salads like Mango Black Bean Salad, Mexican Bean Salad Recipe and Chickpea Avocado Salad are my best friends right now. And this Mexican kale salad is on top of the list…

Skinny Chicken, Broccoli and Rice Casserole with Kale

I’m sure many of you know and love a good old chicken broccoli rice casserole which is delicious but not so light. I created a skinny version of America’s favourite comfort food by cutting down cheese, using brown rice, lean chicken breasts, upped the broccoli and added kale. The result was a delicious casserole without extra calories. My boys ate it twice this week and nobody complained. You don’t need canned soup or a pound of cheese to make this chicken broccoli rice casserole saucy and comforting. Adding just…

Green Kale Salad Recipe

This salad will please the most avid kale hater and doesn’t get soggy for up to 48 hours. Hands down, this salad is the healthiest, easiest and the most delicious salad I ever made! Crunchy, fresh and screaming “It’s spring time”. No salad can get greener than this one, with no dressing to whisk and fresh garlic aromas. And…and…it doesn’t get soggy for up to 48 hours and maybe more. It means, you can take leftovers to work. I love making salads and our friends always ask me…

Ground Turkey Stew

As I am writing up this ground turkey stew recipe and finishing the last bowl of it, I’m thinking I should make stews more often. Definitely! Stew is healthy and quick stovetop meal that keeps well refrigerated for days. Plus, it’s so easy to control the macros: want more protein=> add more meat, want more veggies=> add greens, less carbs=> no problem, don’t add any if you wish. Try my slow cooker pumpkin stew with chicken and quinoa stew with beef. As I keep doing Insanity, I have to be creative…

Chicken Abruzzi

A few weeks ago, one Saturday afternoon, while shopping in the US (we live near the border and go across often), Kyle asked to have lunch at the Olive Garden. In my mind, I said good-bye to yesterday’s burnt 800 calories and off we went. You can imagine my eyes (we don’t eat out often, especially at Italian restaurants, duh) when I saw a lighter menu. Whaaaat?! Chicken Abruzzi was one of them. The description: Grilled chicken breast in a savoury broth simmered with cannellini beans, kale and garden…

Spaghetti Squash Quiche with Kale and Mushrooms

Spaghetti squash is a vegetable with a noodle like flesh and a sweet taste. It can easily replace pasta in a casserole (spaghetti squash casserole), make a low carb “noodle” boat (spaghetti squash boats Tex Mex) and now form a crust in this meaty and delicious gluten free spaghetti squash quiche. Why not?! You don’t have to squeeze the liquid out or any extra steps. Once pressed in a pie plate, spaghetti squash easily replaces traditional flour crust without extra carbs. I have to clarify, I’m not on a…
